HARVESTING and CANNING on the Fourth of July!

Cherries in Honey
5 lbs. of pitted cherries
3 cups of water
1 cup honey
Combine water and honey in a large stock pot. Bring to a boil. Turn heat to medium and add the cherries. Simmer the cherries in the honey water for 3-4 minutes. Ladle the hot cherries and liquid into pint jars until 1 inch of headspace is reached. Wipe rims and add lids and rings. Water bath for 15 minutes.
