Today we join Derek Yamashita, as he harvests fresh wasabi from a rural farm deep in the mountains of Yamagata Prefecture.
We also see how freshly harvested wasabi is prepared and get to taste the difference between imitation wasabi and the real wasabi back at the farmers shop.
Real wasabi is by far the most difficult commercial crop to produce and requires extreme care and expertise to successfully raise over the three years it takes to grow.

Very interesting and informative, Derek-san! About 6 months ago Quinlan at Go North Japan showed wild wasabi foraging, too, so this makes a nice contrast with his video.
