I made this for thanksgiving and let me tell you----everyone was talking about these potatoes for about a week straight. They are that good. You can easily eat 2-3 each person or at least I could. They are amazing

You can hold a wooden spoon beside your potato & it will stop your knife from cutting all the way through. 😊

Put a chopstick on each side of the potato and cut down to the chopstick barrier. A really good idea -- not mine!

+vinnieK Thanks for the validation! So simple to create a cutting barrier. It has worked for me, but simple butter is enough. No need for all the additional calories. A good potato is a good potato by itself. Fancy shmancy is not needed.

You could use two wooden spoons potatoe in the middle to make your cuts even.

Laura - lay a chopstick on each side of the potato as a stop so that you don't cut through the potato. You can then concentrate on how thin you slice them and not on accidentally cutting through them.

When I make these, I first microwave the potatoes for about five minutes and then cool in a bowl of cold water before slicing. It saves a heck of a lot of time in the oven cooking process.

just a tip on how to cut your hasselbacks, place 2 shallow dishes on each side of the potato (or anything you have in your kitchen that will work) The world is your pickle. This way you will not slice them all the way down.

THIS IS A SWEDISH SIDE DISH. It's called; "Hasselbackspotatis". VERY POPULAR. BUT THIS RECIPE IS NOT THE REAL. THE REAL RECIPIE YOU COAT THE potatoes with melted butter and add salt. Then grill them, then take them out of the oven and but some room temperature butter in the slices of the potatoes and add bread crumbs. And then in the oven again. 😉

Um, this is a 'real' recipe. I'll grant you that perhaps it isn't the 'original' recipe, but that doesn't make it less 'real' for not being original. The recipe isn't the boss of you, you are the boss of your recipe after all. Oh, and actually, it's more a preparation procedure than a recipe.

I don't know if you're gonna read this but thank you so much for all the recipes! I literally always reference to your website for every single recipe I do and they always turn out fantastic! I even wanted to experiment one time and tried to make Oreo cheesecake brownie (sorta like your red velvet cheesecake brownies). So I got it from another site, but I remembered what you said about chocolate and adding coffee so I did that because the recipe didn't clean for it and it turned out delicious! My entire family loved it. So thank you! :)

Hey Laura, Love the show, but i'm not gonna lie, everytime I do one of your recipies it never goes right. I'm not a bad cook by any means and I tend to make stuff fine, but a lot of yours do fail me which makes me sad because I like watching you and the show. For example, I just made these and they were in the oven for 1hr and 20mins and they still aren't cooked!? There was a few other things ive made from your channel and it just completely failed. I'm sorry :(

I think it could be that your oven wasnt preheated or hot enough, maybe your potatoes are giant, or you didnt score them deep enough or enough times, htats why. ive baked potatoes for 45 mins only and they came out really well, so just giving some suggestions :) try try again.

Laura in the Kitchen If you rinse the potatoes really well after you slice them and let the water get between each slice, it helps to rinse away the starch which will help the potatoes fan out and not stick together as much when you bake them. since the starch in the potato acts as a glue, making each piece stick together when baked.

Just a tip, put bread crumbs on top of the potatoes before you put them in the oven, it will make it more crunchy. This is the original Swedish way of cooking them!

Thank you Laura, you're a gem...I made these before and the never fanned out, and they stuck together. I think I see what I did wrong. I just put olive oil on them and stuck them in the oven like the recipe told me. lol They didn't suggest checking and basting them, LOL!!!! Now you do this about every 10 minutes, right?

From Restaurant "Hasselbacken" in Stockholm, Sweden. This version lacks thyme, though. And you'd be better off cutting further down to the bottom. Just put a length of something on either side to stop you from going all the way through. Let the off cuts bake too, until done, they make for a perfect snack.

Ah! there is a better way to slice your potatoes! Hey Laura, dont feel back me saying this... I watch this Australian guy showing a simple but ingenius way to score your potatoes...take two small wooden spons... submarine the potatoes inbetween and slice them and you dont have to worry about accidently slicing them all the way through!!! Haha!! sounds good? Great!!

Tip: You can put chopsticks along each side of the potato. It makes the cutting much easier.

I like your method of bathing the potatoes every 10-15 min, but hate to think that I would have to spend so much time over one single recipe. I have done a similar recipe before, and it is definitely delicious.

lovely ... but basically "fried" = unhealthy :( I wonder if with the last butter pass would it be a good idea to put the salt and pepper into the melt and also remove the rosemary needles into it too to give a bit more overall flavor cuz its hard to get the P&S into all the crevisses. I do a toaster oven version of this with thicker junks and just drizzle olive oil and its quite good, but this would make a fine sometimes treat, but again its better to stay away from the "fried-ness" of such foods, just sayin!

It's still just a potato! I did the fresh garlic butter but I didn't spend about 3 dollars for fresh rosemary that I might use once! I baste it every 15 minutes and it still came out bland and dry! I did also use garlic salt and freshly ground pepper.

Wonderful recipe! I am wondering if using salted butter or placing salt into the melted unstalted butter before basting would help the seasoning reach all the slices perfectly. As long as you don't oversalt the butter. Just a thought.

very few people know how to make these the right way. more often than not, i've had them where they are like overdone (Dry) scalloped potatoes. firm, chewy, not at all fluffy. best way to make these is to bake them without cutting them, then about halfway done, slice them and drown them in oil butter baste, and continue baking. the result is a french fry texture instead of the usual firm chewy texture that most people get outta these.

are you supposed to be serving these as 1 potato per person? I cant see anyone at the dinner table cutting em in half and sharing them...If I have about 20 guests coming, I wouldnt do such large potatoes....instead I'd do baby potatoes so my guests can just scoop up a handful into their plates.

It would be easier to get a one quarter inch dowel rod on each side of the potato. It will stop the knife and make all the cuts equal. A tip from a 40 year butcher.

Love hasselback potatos, but next time, try peeling the potatos. Ive seen so many recepies where people dont peel the potatos, and the really should be peel before making them. but great recepie anyway.

Rinse the starch away under running water after you cut them. It will keep the sections from sticking together and allow for more flavoring to get inside.

Insert a wooden skewer 3/4 way from bottom all the way through, makes it easier to slice, then remove before going to oven.

That's not burnt! It's just the skin of the potato gets darker when cooked, cuz it's darker in colot that the potato itself.

If you put the potato in a large spoon and then cut, you will not accidentally cut right through the potato because the rim of the spoon will stop your knife!
