That is the first time I've ever viewed the slicing of a red pepper from inside the red pepper 😆 Very cool. I actually squeeze out grated potatoes as that reduces the amount of starch in the dish. Grated zucchini mixed with a beaten egg is also an option. The egg will bind the zucchini together.

I’m not sure if I’ll like it mostly because of the carrots. It is, however, a very nutritious side dish. I do compliment your presentation skills, your clean workspace, the fact that the viewer can learn much from your kitchen skills, and of course your cameraman’s creativity and competence.
