So for anyone wondering, there are a few reasons why doubling the oven temperature doesn't double the cooking/baking speed. One is that you aren't actually doubling the temperature. 0 degrees Fahrenheit is not actually 0. Absolute 0 in Fahrenheit is -459.67 degrees Fahrenheit. Going from 300°F to 600°F is actually an increase of 40%. Another reason is heat distribution. Things heat from the outside and it takes time for that heat to move inwards. Cokking at a higher temperature will cook the outside quickly without giving enough tome for the heat to get to and cook the inside. A final reason is chemistry and physics. Certain reactions may be triggered or accelerated at certain temperatures. These can greatly affect the end result. Some reactions are undesirable because they ruin the flavour or texture. Some reactions need to progress at a certain speed, and a higher temperature will increase the speed. Some ingredients also have physical interactions and temperature will affect the speed as well. A way to see this is with cold oven cakes. These are cake recipes that require not preheating the oven. Try baking them without preheating as per the recipe and then try it with preheating. There will be a noticeable difference between the cakes.
