However, it would have been even more interesting if the representation included the vibrant and often overlooked North East region of India.

If anyone is feeling adventurous about cooking with fish head like the dish shown here, here's few pro tip: 1. Select a fatty fish with large head, the fish oil will render out while frying adding the umami taste needed 2. Fry it quite crispy if you can, it will crumble easily while eating, don't be afraid if it becomes a bit darker, adds flavor, very difficult to burn a fish head.. 3. After adding onion, vegetables etc, slow cook them on low flame, let the sugars in the veggies caramelize, it will give a sweetness to the dish..don't be afraid to break the fish head a bit when you mix with the vegetables.. 4. At the end of cooking just before turning the heat off, add light dash/drizzle of mustard oil for the extra punch.. 5. Pair it with rice snd try to eat with hands, indian style, enhance the taste.. P.S: you can keep fryied fish head, or fish stalk in your refrigerator and add them to any dish, starting from simple daal to pulao..for the extra fishy umami flavour..😊

One of my favourite videos on the channel, Beryl! I grew up eating so many of these dishes. And just as Magavi beautifully mentioned, these "Stolen morsels from my Childhood" were prepared by a multitude of incredible women whom I was lucky to have been raised by. I now get to experiment, learn and try my hand at recreating these dishes, and seeing you whip them up has bolstered my confidence as well 💖

Hi Beryl you definitely missed Odisha!its situated in the eastern part of India and is very underrated even in India when it comes to food.You should try either dahi bara aloo dum which is a completely different version of dahi vada and imhbo the best version of it.other dishes you can try is dalma(dal with vegetables) or santula(vegetable stew )

In Iran we have a dish that is very similar to Baigan Bharata that we call it Mirzaghasemi with Grilled Eggplant and Tomato, garlic, and egg. It's a very smooth and easy also a very delicious dish 😋😋😋👌👌👌

You know a fair bit about Indian cuisine Beryl but one thing I have never seen on any of your episodes. During peak winters in North India, my late mom used to make what we call Besan Ka Sheera. It's a comforting drink made out of chick pea flour, sugar, milk, desi ghee, cardamom powder and occasionally, a dash of turmeric powder. Ask your mom in law or search online for more. It's the perfect drink if you are having cold or a running nose. Love your content. Best wishes always. Atul Chandigarh, India.

For me the great thing was the de-mystifying of Indian cooking. Yes, some are more 'involved'. But, I kept hearing that for the home cook there is a base of ingredients, prep-styles and cooking techniques. Years ago I bought an 'Indian spice seasoning' collection. Used it a couple of times and not really knowing what to do with them, I gave up. I think they're still in the back of my cupboard (probably should let it go.) I really love the taste and flavors of Indian cooking. Perhaps I need to find someone to show me and teach me - hands on, a home cook's way of bringing that into my kitchen. Thanks for the variety we saw today.
