Ingredients:
Pineapple
Chicken Thighs
Marinade:
Ginger
Green Onions
Garlic Cloves
Brown Sugar
Seasoning Sauce
Sweet Cooking Rice Seasoning
Rice Vinegar
Pineapple Juice
Directions:
Cut pineapple in half then take out the guts and set aside
Chop green onions and set aside
Cut chicken thighs into thin pieces, trim off fat
In a bowl combine all ingredients for the marinade, chicken thighs, and half of the chopped green onions
Cook chicken on medium heat until done
In a separate pot boil excess marinade until foamy then strain in a bowl
Plate the pineapple boats with rice inside it, top with cooked chicken and other half of the green onions, drizzle the marinade sauce on top
