So good and butter makes everything better. Before roasting my turkey also gets a good coating of butter, sprinkle with flour, salt and pepper. Crisp skin and very juicy. Butter and the flour make a coating and keeps moisture in. I am 89 so have cooked a lot, plus I taught cooking for 8 years. Love this show, my favorite.

Rachel, my dear, I love your videos. You are lovely to look at and your kitchen habits are so clean and noteworthy. You are one of the few cooks who realizes how important it is to not only wash your hands but you put on gloves when you put your fingers in the food; this is something that all cooks should do. When I see a cook put their bear fingers in the food, swishing the foods that are already kind of soggy anyway, it just seems so unsanitary to me. Thank you for the delicious meals you prepare. I just found your channel. At 77, I have raised 3 children and done a fare amount of cooking-and I know a good recipe when I see one!!! Also, The process and how careful one is to get the seasonings right and just all around good practices make your videos so entertaining and useful. My husband has had dementia for 10 years so we’ve lived in assisted living and he’s now in a nursing facility. I just made this baked chicken for dinner tonight and it is out of this world fantastic! I’ve been cooking for years and my baked chicken thighs have always been a favorite. But this is definitely a notch better than mine. Who knew what just a little butter would do to take this over the top. The butter plus the small amount of brown sugar mixed with the seasonings was a delicious addition. A friend in Jamaica told me to rub my chicken ir pork with fresh lime or lemon before seasoning; she said it opens the poresc😢f the meat & helps it absorb the spices. I like that you prepped your chicken with butter & the combo of spices with the hint o f brown sugar sounds perfectly delicious. I baje it sometimes with BBQ sauce that I make,(start with half coke & half ketchup & add the spices you like along with some cayenne pepper,garlic cloves or garlic powder,lemon pepper some brown sugar,prepared mustard,chopped sweet onions, diced & heat on medium until it starts to simmer; turn it down to low heat, cover with lid & let it simmer until it thickens. I love that you can add equal parts of coke & tomato ketchup if you didn't make enough & increase the spices to taste. Hope you try this & I bet you & Ron will like it. I get so down at Christmas time. It dates back to my first husband who was a bah humbug kind of person. I need to do some baking and shopping but just couldn’t get myself in the mood. I give money to my grandsons since that’s what they like. And money to my sons and daughters in law. Now I should do a little more shopping but I just can’t. My husband said not to worry about giving him anything so I won’t. He understands how down I get and doesn’t push. I started watching some of Rachel’s recipes. Some I’m watching more than once. And suddenly I feel like doing some baking. Maybe just a little baking. I’m still not feeling great, but better than I did earlier. She has a way of making one enjoy life and cooking.
