The game is run on an independent PC, then I use a capture card to feed that into a streaming PC I record all my files in MKV format. I use NVIDIA NVENC HEVC as the encoder. Rate control CBR, bitrate is 15,000. A lot of people use CQP rate control, that requires a bit of fiddling with. And your PC is gonna dictate how much you can push the bitrate. Twitch has a max bitrate of 8000 so that's also not a bad bitrate to set it as for recording.
