I work with dairy cows and pigs in Sweden. The food safety rules are really hard here but there are some that cheat. Milk have a freezing point of ca -0,5 degrees C thanks to the salts. If the freezing point is closer to 0 it might be a problem with the cleaning equipment so it may be some water left in the system after it was cleaned. The rules on this is hard so if it is to close to 0 for a longer time it could be someone who puts water in the milk tank. One farmer cheated on this and used to put extra water in the milk storage tank and once the dairy truck came early to find the hose down the storage tank. The farmer was kicked out from the dairy on the spot!

When on a hotel and catering management course, one of my lecturers stated that when he was a health inspector for a council in central London, visited a very famous five star hotel, with kitchens and prep areas in the basement. First room he saw was a disused toilet set (several cubicles) in each of the toilet bowls he saw spaghetti ( cooked pasta ) filling them. He called the head chef, who said he saw nothing wrong with this !

This one time we were staying in a hotel, we came back from a long day out in 40 degree heat and one of our group wanted a nice cold glass of milk from the breakfast area. She drank two full chugs of lumpy cottage cheese broth before her tastebuds kicked in and she realised they'd turned off the cooler after breakfast without cleaning the machine.

yes, i've been quite surprised several times when a waitress used her bare hands to deliver a plate that was MUCH to hot for ME to handle. oh, and those "insurance" gags reminded me of an old Woody Woodpecker cartoon where he sold "Dooley" insurance that apparently coved him from anything but "being hit by a guided missile". and yes, Woody sent one after him. it chased him around in a very silly fashion before finally getting him.

2:00 - For some time, my local "drugstore" (more like a mini-supermarket in the Americas) had a chilled compartment failure. Managers apparently only noticed until the chilling equipment would literally blow room temperature air. During that time, they kept selling pasteurized milk, which requires an uninterrupted cold chain to make it fresh to your fridge. The first time the milk I purchased at that drugstore tripped the chemical sensors of my mouth that detect toxic bacterial metabolites and send a signal to the part of my brain that triggers a feeling of primal horror, I just chalked it up to someone up in the supply chain having forgotten to put the milk in a fridge. Then it happened again, and again, and again. I stopped buying pasteurized milk from that specific brand for a week, chalking it up to poor manufacturing from their part (it didn't happen if I bought milk packaged by their main competitor). Alas, I love pasteurized milk from the offending brand a bit too much, so one day I caved in and bought that one brand from a different convenience store. Lo and behold, it was perfectly fine. I felt the milk's temperature notoriously colder than at the drugstore. That's where I realized their chilled compartment was failing. That day I went to the drugstore to check, and apparently the staff had realized too: they had removed all perishable items from the chilled compartment and stashed them into the beer fridges that still worked. For the next month or so, until the chilled compartment's machines were being repaired, they had to put up a sign telling people to find dairy in the beer fridges, and another saying there wouldn't be any cold beer until further notice. I guess health inspectors don't show up too often to that drugstore, because I never saw any signs of getting any citations. Or maybe the owners were going to get a citation, but this being Mexico, they negotiated an "extraofficial penalty" (a bribe) of a couple myriad pesos for the inspector and then went full on into getting their chilled compartment fixed.

I have a cousin who is a police officer, once he had his mother visiting and bought some steaks for dinner. When he was at work she started to make dinner but discovered that the steaks were in fact gone bad. She knew which store he had bought them at so she went there and complained. The lady behind the counter was having none of it, my aunt got no refund, no new steaks, no nothing. The steaks were not gone bad bla blah blah. My aunt went back to the appartment and my cousin came home, she told him what had happened and he took the steaks and returned to the store. He was still in uniform. this time the outcome was a bit different, the lady was extremely service minded and he got both a refund and new steaks. The irony was that my aunt at that time was one of the top bosses of the food safety management in our country, she could have made one single call and that store would have had to shut down immediately. So i guess they can be grateful she didnt use her influence that day.

I work in at a place who package food before they go to the stores Last week our department closed down for a few days because of a mouse infestation and mold literally growing in the toilets It didnt suprise me since the janitors did nothing but sitting at their butts all day long and verbally abusing other people. As soon as the news got out they immediatly started to use everyone else as a scapegoat

I had to clean an oven the last place I worked so I sprayed the fan's heat shield with industrial strength degreaser. With this stuff it takes a small amount to touch your skin and the oils are immediately stripped from your skin. I wore gloves and my heat resistant kevlar sleeves. I LOOKED LIKE I'D COME OUT OF A COAL MINE!

Working for a company making machines for butchers. We get a machine delivered for repair that smelled horrible. We open it up, and discover the inner workings were filled and i mean _filled_ with maybe decades of rotten meat scraps that got in through tiny cracks in the casing. We tried to rinse it out with a pressure washer outside, but eventually gave up and told the customer we'd give him a good deal on a new machine, but we are not even going to try to fix his old one. I dread to think of the condition of the rest of that butcher. We also often went on location for small repairs, routine maintenance, and new installs... some places are just shocking.

Not a health inspector but I have a somewhat nasty story for you My mom and I were returning from a road trip to Connecticut when we stopped at this little Italian restaurant in the middle of a field. Not only did the food take an hour and a half to get ready, but the spaghetti my mom was eating had a freaking screw in it! The pizza I had was so greasy the cheese was almost a liquid. Needless to say, worst meal of my life.

Proof of why if it's obvious that it's not properly being maintained and thus will easily fail a health inspection, Chinese buffets shouldn't be built within half a mile of other restaurants unless or until the above situation is proven to not be the case. And why chains/franchises are better because if a manager of one branch fricks up, someone farther above them would be able to fire them and work to fix what went wrong, if possible.

Ok previous inhouse auditer for a grocery store chain here. Ive seen a butcher take obviously bad meat cur the green and black bits off and use it for burger meat. Also at the same store the there was a lady who would continue to remove the expiration date from cut fruit and vegetables and a new ones untill they sold. Favorite perk of the job was the pies the bakery made for me on inspection days. Nothing like a good bribe pie! The bakery never had anything but some small infractions anyways.

I worked in HVAC and refrigeration for 25+ years. We worked on ice machines in restaurants. Ice machines are supposed to be periodically cleaned and sanitized with special solutions. They aren’t. Most of the problems I encounter were maintenance related. These included things like the water distribution system being plugged with mold and calcium. After working in the trade and seeing what I saw, I always order my drinks without ice. I’ve also seen small stores have meat cases go down on the weekend and not be called out until Monday because the weekend rate was higher. The cases would 3:02 be full of meat and in the 60F - 70F range when I arrived.

I used to work at a local restaurant with a 'good' reputation. Or st least the health inspector thought they had one. Trueth is it was a revolving door for people who just needed a boost until they found a better job and the whole town wouldn't buy their chicken cause it was never cooked long enough. When the inspector finally figured out they had a pretty shit reputation and did a real inspection he found food the place didn’t even serve that was like 3 years out of date tucked into places i wouldn't have even considered. There were other messed up things there, very bigoted owner who would turn on literally anyone for one thing, but now i know why there was somehow more storage space than needed there.

No inspector caught it but i did. I was an over the road truck driver at the time and was delivering some paper products to a chicken prossing plant. I needed to take a dump and they let me use their employees bathroom. Wail i was in the stall 7 guys came in and used the urinals and not a single one ever washed his hands before leaving. To this day I will not touch any thing with my bare hands in a public bathroom after washing my hands. I will use a paper towel or some TP to open the door to leave.

Having worked at a community pool complex, I can tell you that bigger pool facilities will not have the vacillating chlorine level problem. We had an entire building of nothing but pumps and piping to regulate the chemicals and they ran even overnight when nobody was there. Our chlorine levels were rock steady, even the baby pool. Any big facility is going to have similar levels of automation. It's the little ones you have to worry about.

I live in a small town that has a much loved Mexican restaurant. I remember one time my sister and I walked up to the door intending to have lunch, only to find the doors locked with a notice on it that it was closed by the health department. I mentioned it to a coworker and she said she heard it was because they were “re-using” the salsa. As in, what wasn’t eaten by the previous diners was added back into the pot to serve to the next diners. Upon testing, the health department found trace amounts of saliva in it. For some unknown reason I thought that restaurant must have learned their lesson and didn’t do it anymore. That is until I met some friends there for dinner and we happened to be sitting near where the wait staff dished up the salsa and chips and I saw with my own eyes the waitress clear the table next to us and she dumped the un-eaten salsa back into the pot, then immediately served us salsa out of the same pot. It’s been 30+ years and I’ve never eaten there again… and I am quite vocal about that experience when anyone tells me it’s their favorite place to eat. I also want to comment about the part of the story that said Chinese restaurants have notoriously the filthiest kitchens in the business. I totally agree. I know this because my friend is the mechanic that the owner/cook of my favorite Chinese restaurant uses whenever his car needs work done. My friend said that whenever he got into said car to start it/drive it the steering wheel was coated with grease. This suggests that the cook doesn’t bother to wash his hands before leaving his kitchen, so I doubt he washes them while he’s preparing/cooking the food.

Speaking of spiders I actually found what I suspect to have been a brown recluse type of spider living in the recycling side of the trashcan of my kitchen. I was gonna kill it if it got too close to what I was eating for breakfast at the time, but I instead got my bug vacuum toy that my retarded Xbox friends thought was some kind of sex toy (in reality it's one of the best things I ever bought and probably the best way to handle tiny intruders) sucked the spider up with it and let the spider loose outside. Works great on anything larger than an ant.

I used to work in a popular ice cream shop. The owner was as cheap as can be. Unfortunately due to her cheap and disgusting ways, we would always get an A on the health inspection. She would make us deep clean everything in bleach since our sanitation pump was always broken. Everything would be a huge mess as the end of the day, and very few of us would actually try to clean up afterwards. But there is only so much you can do without the help of a few others. Granted if we did get a bad grade on the health inspection, she would deduct our pay on our checks because she said, “Lazy people don’t need to be paid “. We weren’t lazy, we were just very limited on our cleaning supplies.
