For the Base:
100 grams oats (blended)
40 grams erythritol (sweetener)
2 eggs
1/2 teaspoon baking powder

100 grams erythritol (sweetener)
30 grams beef gelatin (for extra protein)
For the Topping:
100 grams strawberries

100 grams kiwi
100 grams orange
100 grams nectarine
Instructions
Base:
Preheat your oven to 180°C (350°F).
Blend the oats into a fine flour.
In a mixing bowl, combine the oat flour, erythritol, eggs, and 1/2 teaspoon baking powder. Mix well until you have a smooth batter.
Pour the batter into a baking tray lined with parchment paper.
Bake in the preheated oven for 10-14 minutes, or until the base is firm and lightly golden.
Remove from the oven and let it cool completely.
Cream Layer:
While the base is cooling, prepare the cream layer.
In a bowl, combine the low-fat yogurt, Philadelphia cream cheese, gelatinand erythritol. Mix until smooth.
Assembly:
Once the base has cooled, spread the cream mixture evenly over the top.
Arrange the fruit on top of the cream layer. You can slice the strawberries, kiwi, orange, and nectarine into thin pieces for easier arrangement.
Final Steps:
Place the cake in the refrigerator for at least 2-3 hours, or until the cream layer is set and firm.
