Ingredients for Lentil Stew:
• 250 g of lentils
• 1 large onion
• 2 garlic cloves
• 2 carrots
• 1 red bell pepper
• 1 green bell pepper
• 1 zucchini
• 2 ripe tomatoes
• 1 large potato
• Extra virgin olive oil
• Sweet paprika, a bay leaf, salt, and water
Step-by-Step Instructions:
1. Rinse the lentils and soak them for 12 hours.
2. Peel and chop all the vegetables into small pieces, letting the vibrant colors fill your cutting board.
3. In a pot with a bit of olive oil, sauté the onion and garlic until their aroma fills the kitchen.
4. Add the bell peppers and carrots, letting them soften and release their flavors.
5. Stir in the tomatoes and cook until they reduce into a rich base.
6. Add the zucchini and potato, combining them gently.
7. Mix in the lentils, enough water to cover them, the bay leaf, and a touch of sweet paprika.
8. Simmer on low heat for 40-50 minutes, stirring occasionally and letting the magic happen.
9. Adjust the salt, remove the bay leaf, and serve a warm, hearty dish full of care and love.
