You are so right about seasonings in foods for littles! My children are all young adults now, but as they were weaned or nursed and started solids, I made very few alterations with my cooking seasoning wise once we established potential allergen issues with some caution of course. The results are adult children that eat a wide range of foods and flavors; all can hold their own in the kitchen; and one even pursued culinary training! Can’t wait to try these recipes! (For the grands of course🙄 )

Having good kiddie snacks are important…I remember many years ago when I was around seven I’d stay at my aunts house in Hamtramck Mich…….my cousin and I would earn a treat by pulling weeds in my aunts beautiful flower beds. It was called a frozen Lindie…..a small paper cup filled with fruit and juice, sometimes tiny pieces of veggies in fresh pineapple juice. They sold them at the corner market. When I made them for my littles instead of a popsicle stick I’d use a piece of a pretzel stick for a holder…..homemade frozen pudding is good also. Yummy popsicles….silicone ice cube trays would work…..frozen mashed bananas, chocolate milk, yogurt, homemade ice cream without all the added junk. I’d make grilled cheese Sammie’s an cut into safe sizes and freeze ahead, need a hurry up lunch take out what you need and warm in the air fryer. Healthy cereal with raisins put in a kiddie snack cup that doesn’t spill. I make my son in law a healthy rice crispy bar he’s loves a lot……..have fun 😊

I have shredded zucchini frozen and never thought of using it for savory muffins. I struggle to come up with a different starch for dinner and the muffins are a great idea. I will make them more adult-friendly by adding sliced fried hot peppers and onions with the zucchini. You got me thinking outside the box.

What a great idea/recipes for the toddler's in your life. Totally agree with you about introducing flavours to your kids, if you have allergies you have to take that into consideration. Our motto with our kids was always to let them try new things and honestly, other than not giving your kids honey before one or dealing with a allergy, your kids should be able to eat what your eating (your going to have to cut things accordingly). I make a veggie muffin to this day that the whole family loves and I don't have toddlers anymore.

My child has an egg allergy as well and I have been baking egg free for 10 years. Flax is a wonderful replacement for banana breads and muffins. And cream cheese is AMAZING for cookies.

This is perfect! My son is 16 months and doesn’t eat eggs or dairy. I will be trying these to see what he thinks of them - sometimes he will eat my homemade versions and other times he won’t! I expect the muffins will be a hit but not the cereal bars… fortunately, I’m always happy to eat what he doesn’t 😁 Looking forward to seeing what you do in the rest of the series.

My granddaughter is 3 but I made all of her baby food from scratch and using organic ingredients. When she turned one, that all went down the tube. She lives off of spaghettios, chicken nuggets, pizza and spaghetti, not because her parents and I don't try to feed her nutritious food, it's because she's extremely picky and likes to eat the same things like her dad. Even making homemade muffins and quick breads is usually a no go for her. And not only is she picky but she eats very little. I have to threaten her (in a grandmotherly way), to get her to eat pizza. At school she has eaten the same exact meal since school started. Boscoe Sticks. The only time she hasn't is because a teacher tried to get her to eat something different. But she always goes back to Boscoe Sticks. So I try to have her snacks at my house be healthy like raisins and dried fruits and granola bars and apples. She'll go through a bag of apples in a day because she doesn't believe in eating them alone. She gives me one whenever she eats it. We've eaten three apples in a day. 😂😂 I envy the people who have good eaters. Trying to get the nutrition in when I can. Those granola bars look amazing.

I buy all the supplies for my granola bars, trail mix, cereal, etc in bulk at an Amish store, so it costs a fraction of the price of store bought. It’s also very good to buy bread making supplies in bulk too.

Our grand baby has been eating from Grammy’s pantry. First we started out with apple sauce and peach sauce. Then moved to green beans then ugly chicken, but she likes it with something else. The other day I put applesauce and chicken together. Made teething biscuits for her. I want to teach her how to cook and help Grammy in the kitchen when I am cooking. Welcome back, missed you. A good sweetener for the muffins might be carrot juice, or apple sauce or juice. They look and sound delicious!

Instead of syrup you could also use date sugar, which is just ground up dates. That way you still get the fiber along with the sweetness.

You can use a combination of dried veg. Just grind them up and put some of the powder in your recipe. You can even add a couple of spoons to pancakes. They won't even know it's in there.!

I had a friend who could not get her children to eat fruits and veggies and wanted to know how my kids would eat them. I told her they were eating fruits and veggies in everything. When they were little one of their favourite cookies were spiced carrot cookies. They loved spaghetti and so in the sauce would be little meat but tonnes of veggies. Cakes always had fruit or veggies in them. It is easy to start when they are younger than it is to try when the are older kids. To this day her kids are in their 20's and they still don't eat fruits and veggies.

How do you clean your coffee grinder? I use it for flax seeds since my husband went vegan and there's all kinds of food stuff in it, plus, eggs don't go in vegan food lol. I do what I can, but I was curious if maybe you have an easier way than I do it.

I'm curious about the muffin recipe. It says 2 tsp of honey. Is that correct? I don't recall u adding it to the recipe. If it is correct, does baking the honey remove the dangers for the young kids? Both recipes look good even tho I don't have young ones, we adults will enjoy them. Its good to have u back. I pray all is well with ur family. Thank u 💓.

I think I left it out, please research adding it. Some say if baked it's safe, but I haven't done enough research myself to give you a confident answer
