@@GreyWhiteBlue I personally didn’t think it was mushy! Though, since I’m vegan, I did not use egg. Instead, I made a coating using flour and water as a substitute. I don’t know whether it affected the texture, but it worked just fine and still very delicious (: In case if you’re (or anyone here is) vegan, you can make it by just mixing equal parts flour and water! (I added some black pepper and salt to it.)

Hi, depending on the quality of the tofu, you may also want to try to double freeze it after every thawing and pressing your tofu 😊

No need to use eggs. I usually use a vegan yogurt like oat or soy yogurt, mixed with a little bit of water and some black salt, and it makes a perfect dredge.

Important to note that the tofu you need to get this texture is I believe called 'Silken Firm' not the usual Firm Tofu available in most shops in the UK, for example, which goes spongey.

You should be able to get this texture with Cauldron brand tofu. I've had a lot of success with it.

You might be able to get a similar effect by freezing the tofu first

@@ceniloar My understanding is that freezing the tofu has more to do with drawing out moisture and firming it up. The ice formation also makes it separate into chunks more readily. The flaky texture on the other hand is due to how the bean curd is pressed. It just comes down to trying the same or similar firmness with different brands, and inspecting their texture. (Mary's test kitchen recommended looking for tofu that's labeled as traditional style)

Delicious recipe. For those who are wondering, it is indeed "firm tofu" and not "silken tofu" but not that of your Biocoop like those in Europe. This tofu is too compact. This is "Asian" firm tofu that you will only find in the Asian supermarket. This firm tofu is soaked in a liquid and can be bought in the chilled section. I struggled to find the right tofu to find this texture :) For vegetarians you can replace the anchovy worcestershire sauce with balsamic vinegar and tamarind paste (in equal measure) which gives almost the same taste. The eggs can be replaced by flour and water in equal parts too... For better flavors soak the tofu for a good half hour in a cold vegetable broth before pressing it first.

I had Covid in November and my tastebuds have been on and off. At first I wasn’t able to taste at all, now 2 weeks ago I cannot handle the taste or smell of meat or certain dairy products. I’ve only been able to eat seafood but I wanted to find other alternatives, one being tofu. I’m so thankful for the recipes you put together because they look like the real deal. Great recipe (minus the eggs)! Personally I soak the tofu in vegetable broth for a few minutes after getting all the water out and it sucks up all that flavor. Then when you bite in, its like juicy meat.

Thanks for this tip! Several years ago I discovered that cooking with vegetable broth (and especially reducing the broth through simmering) is the secret to developing amazing flavor in so many of the dishes I cook. But I never would’ve thought about soaking tofu in broth. I’ll definitely follow your suggestion.

@@lorelai251 das müsste der ganz normale Tofu Natur sein. Wenn es dicke Würfel sind kannst du diese ja einfach halbieren oder entsprechend dünner schneiden. Wenn du einen Asialaden in der Nähe haben solltest, bekommst du dort auf jeden Fall den Tofu.

Good to know that there is a way but I think I prefer to walk just 3 min to get the vegan crispy chicken from my supermarket instead of two days preparation 😅 In the Katsudon recipe it tastes nearly the same 🙌 But for the next special occasion I would try this at least once just out of curiosity

Just to confirm, regular tofu is "soft" tofu and not "firm" tofu? That's the problem I'm afraid of having and the tofu chicken recipe. I can't get same level of texture as shown, when I press/freeze/press, the tofu texture is more like a sponge full of holes.

Yes, quality of the tofu may vary, to be safe, this is a regular tofu, a little bit softer than firm

in my place they selling very firm tofu and very less water and easy to cook just mix black and white peeper, salt, ajinomoto , a little bit sugar and chicken seasoning powder ,im using food processor to make it very fine, then i just springkle it to tofu

Thanks for sharing. Excellent! Not because it looks like chicken (which I have never tasted, and don't care to) BUT because of the extra excess water that freezing will eliminate. Will this work with any Tofu type? Firm or Extra firm? I will try this trick to make my Tofu-Matar(Peas) or Tofu-Palak (Spinach) Tikka. These curries are usually made with Paneer (Indian Cheese), but Tofu offers a healthier alternative. For vegetarian option, I will make an Arroroot or Cornstarch slurry instead of using eggs. Hi! Varieties of tofu either firm, soft, silken soft really varies per region and term. I recommended to find the soft tofu (texture should be like feta cheese). In our region we call that as regular tofu, others were korean silken, soft silken 😊
