Ingredients:
2 cups of chickpea (precooked)
1 large carrot shredded
1/2 of large yellow onion dices
3 tbsp corn flour
2 celery stalk (diced)
3 cloves of garlic
1/4 cup shredded cheese
1/4 cup extra virgin olive oil
1 cup coconut milk
1 cup evaporated milk
3 cups aquafaba (chickpea liquid)
1/2 teaspoon sea salt
1/4 tsp cayenne pepper
1/2 tsp turmeric
1/2 tsp oregano
Instructions:
Add olive oil, onions, celery and carrot to a pot and sautee for 5-7 minutes.
Add the garlic then corn flour; Mix the ingredients well
Slowly add the aquafaba and stir until the flour dissolves *chickpea liquid
Add the turmeric, cayenne pepper, oregano
Add evaporated milk and coconut milk
Add the chickpea
3/4 tsp sea salt
Bring the soup to a boil then reduce heat and simmer for 10 minutes
Blend the chickpea to smooth consistency
