Bloody hell.. you’ve got my guts rumbling mate !! I live up north between Durham and Newcastle.. and we love grub like this up our way, especially with plenty of thick gravy onboard. One thing I like about you is you know what’s good for you when it comes to grub.. and I always thought that the further you went down the country the less gravy you put on the plate, but you definitely proved that theory wrong. I know what I’m cooking midweek.. I’ve got a couple of topside joints in the freezer. Cheers Andy👍

I'm sure it was good Andy but try this, I'll guarantee it'll improve it by at least 50%, throw your meat into a big bowl with some flour, toss the meat in the flour until it's coated in a fairly fine but seeable layer, then in small batches fry it for just a few min on all sides to give it a good browning, you can do this on high and not worrie about it being cooked through because your going to stew it anyway, like I say do it in small batches, it's a little bit of a mess around but it'll be worth it, once it's all browned, carry on with your regular recipe. It'll give you a deeper richer flavor and help your gravy thicken a bit, might even save you an oxo cube

You should always brown the meat 1st to seal in the flavour.
@fatandy
@fatandy Жыл бұрын
Sometimes I do, but honestly you didn’t need to with this, the juices and everything just everything just came together, it was insane, I never bother browning it when I do a stew, just let everything cook in together in the pot 👍🏻
@JonPaul1953
@JonPaul1953 Жыл бұрын
It doesn't actually seal anything in. After searing a steak, say, blood and other fluids still escape. It creates the Maillard Reaction, where sugars and other compounds caramelise on the surface and give it the colour and extra flavour.
@JonPaul1953
@JonPaul1953 Жыл бұрын

Thought you would like that, it would serve 8 people and they would be good portions like the one on my plate, it was blinding, couldn’t believe how the lid went on, thought I would have to trim it, yeah did use 2 packs of Atora but wanted a really thick topping, if you want you can make a smaller one, but I knew the rest of the family would want a lump of it 😂👍🏻

@@fatandyYes, I was impressed with the eyeballing of the lid mate. Must have a good eye from the work you do? Nope, I'll make it exactly like yours for me and the missus, then portion up and freeze the rest, mate👍 Good thing for Chrimbo is that you could make it the day before, and bake on the day🎄. Just have to careful with oven temp/time 'cos it'll need longer from cold🤔. Might try that, too. Make on Saturday and bake on Sunday?
