I If I lived closer I would work with you in a heartbeat! Love your video. I make cordial every year...elderflowers are one of natures lovely bounties. Instead if just drinking the cordial diluted in water I like to pour it over vanilla ice cream, it freezes and results in a great topping on the ice cream. Stay safe.

Love elderflower season, I make champagne and cordial, some years are better than others for the champers but the cordial is great every year, Elder flower and apple jam. Yum 😊

Hi Jane, I live in South Africa. Lovely to see such beautiful English Country side. I have a Elderflower in my garden and am wanting to try your recipe. You say that the flowers have a beautiful fragrance. Mine don't seem to have. Any ideas why? Also it has never fruited, any ideas on that as well?

Ooh, that’s interesting Barbara. My first thought would be, please make 100% sure it is an Elder - my go to resource for wild plant ID is the ‘Plants For A Future’ website. Secondly, there are many different types of elder, so it may be we have different varieties, again please check the above website to make sure yours is safe to consume. And as for the fragrance, it’s a sweet light and floral scent, that can lean towards to smell of cat pee (once Jonny thought that the cat had peed in our house, only to realise it was the elder in full flower outside 🤣) I do hope you manage to find the flowers and make the elderflower cordial, it is such a beautiful drink 😊

Ah, hey lovely! How are you and the little one doing? If you do happen to stumble over some elderflower, you can get almost the same kick out of steeping some blooms in hot water - the smell is powerful, and the tea is surprisingly tasty! Or you can just munch the little flowers straight off the tree, even easier!

Welcome back Jane. On the subject of foraging, its nearly time to collect wild garlic seeds to start growing your own. The wild garlic seed pods in my garden are still green but I am sure it wont be long before they are bursting open to reveal the small black seeds inside. Take care.

Thank kns! Depending on the city, you may be able to hunt down elders locally - they like quite scrappy soil, are often found in hedges or even on wasteground. Just don't pick them along busy roads or where they may be sprayed or contaminated with fumes etc

I’m still drinking last years elderflower cordial which has been in the fridge all this time 😊. I love it on a hot day - very refreshing, but I love it in a nice glass of fizz 🥂. It would have been going to Cornwall with us had we have been able to go but sadly we’re still staying home and safe. We’ll be there soon, elderflower cordial too 🚐🥂😘

Yummmmmm. I made some about three or four years ago using the elder flowers from the field. We drank two bottles which were just the best, but going to use the other bottles they had gone mouldy just inside the cap. They had been through the dish washer and I used the citric acid, so not sure what went wrong. They were on the side in the kitchen, maybe I should have put them in a cupboard or the fridge ? Would love to make some more but all that sugar lol. Maybe next year if I can lose all the weight... again :(. Great video though and reminded me of my little adventure in to elderflower cordial :).

Ah, 'sweet' memories!!! Yeah, the sugar - not ideal! Next time you're down the field, pop some of the little flowers into a mug and top up with hot water - you'll get the exact same fragrance, with none of the carbs 👌 PS I would recommend storing in the fridge to keep the mould at bay.

Yay - your back. Wow Elderflower cordial - that takes me back to my childhood, as my gran used to make it. Didn't know that it was that easy to make, so definitely looks worth a try. Will also be interested in you covering Elderberry later in the year, as a lot of evidence of its health benefits. Also want to say how fantastic the opening lighting was for this episode - really stunning ! In fact the whole episode was really high quality. Or have you just upgraded your camera ?
