I remember making my mining barge in Space Engineers with only upwards thrusters and gyros. It worked fine for me but friend playing with me once "hopped in to do some quick mining" and didn't expect the severe lack of control in the other directions. Pro tip for helicopter play. I always use the settings simular to the battlefield vietnam the older one. You can keybind the same as that and it WILL help you fly easier

I think you have to hit them on the right spot, but the biggest issue right now is the hit detection not registering hits.

the Hip can take 10-15 rounds of 23mm frag IRL, same with the blackhawk, if you aren't hitting the ATRQ or engine compartment, yeah you'll tear up the troop bay, but you won't really damage the helo or hurt the pilots unless you hit critical linkages or the cockpit
