some quality control misses but a decent performing knives if you can bypass it faults spot on hest treat

Their quality control issues combined with their price have always kept me from ordering a Helle knife. I want to make sure I'll get a good one for that money. I'll probably buy one from a knife store if I could pick through a couple of helle knives in person and check the fit and finish.

Yeah, and that’s the problem with commercial knives. They’ve only seen machines and they just can’t do the job like a Stone can

Its just a waaay to short of a grind on a knife thats the problem so you need to remove much steel when you sharpen

I've got this same job to do on one of my scandis with a micro bevel, not looking forward to 3 plus hours of sharpened.........

Different knives take Different times. But yeah scandis are a pain to sharpen compared to a full flat or similar thin grind
