It’s so strange to because why not taste it? Being vegan or vegetarian is a choice based largely on not wanting to exploit animals. She’s cooking the meat for someone else, tasting it doesn’t mean she is contributing to said exploitation more than she already is. It’s not like she’s cooking steak for her to eat. Just comes off as some weird “well, I’m not supposed to eat animal products at all” without understanding why vegans don’t eat animal products.

Its not really about how many mistakes, mistakes count are just a fun exercise, id doesn't really mean that chefs that had more mistakes necessarly deserve to go. See Clemenza in S10 that had more mistakes than Guy but still deserved to stay over him because of his mistakes on meat.
