At first, I didn't understand why Ramsay didn't like Ben. Then I recalled an episode of Kitchen Nightmares where he was trying to help a Scottish restaurant with elite French chefs keep the doors open. It boiled down to them trying too hard to impress and not giving their customers what they wanted and what was suitable for the area they were serving. With his credentials, Ben had the potential to take the competition but he was too much in his own head trying to impress instead of actually cooking.

That first challenge confirms that the producers are watching and paying _very_ close attention during the challenges. It's one of the ways they try to keep challenges close until the end, by controlling who goes up first.
