Love your tour. I dont need to plant the "weeds" since I can walk out my door and find plaintain, clover and dandelion anywhere I walk on my property. I have everything you have but organized it differently. I dont try to contain anything, i just plant it where I don't care how far and wide it spreads. I added comfrey this year. I have the same soil issues you have. Dig down 2 inches and I hit solid clay and rock. I can dig through it but it is a chore. My comfrey is to chop and drop the leaves to add nutrients back to the soil. I'm trying to be all organic and not buy anything from any store to establish a bed or feed it. I'm not there yet, my biggest amendment being peat moss and lime.

The clover has been an interesting experiment. We have clover in our lawn, but my husband usually mows the flowers over before I can get to them. 😅

We have very cold winter months, rain and frost, down to 5 degree Celsius Very hot summer months, up to 40 degree Celsius. I'm cultivating some herbs at home, but don't know if they will survive at the farm I'm from South Africa, the farm is based in the Small Karoo

Perennial herbs are a great choice as they will put up with a wider range of conditions. Calendula would do well there. It has high heat and frost tolerance. We’ve had calendula still blooming here even after a couple frosts.
