You know if ya didn’t throw the dust out, go get some chocolate and melt it and add the ribbon candy and that way you get the best of both worlds and you don’t waste it. That’s what I would do. I have about 40 or more lbs of chocolate but no kitchen or kitchen😭.. that’s what I would do

Watching your videos nearly brought me to tears. You have my dream job. I have been making " hand crafted" chocolates since 1982. I started out just making milk chocolate candies from melting chocolate wafers and ended up making a million different things with wafers and "real chocolate". I worked in acandy and craft store in the Quakertown Farmers Market in Quakertown Pennsylvania for 10 years. Over those years i accumulated a collection of over 1,000 candy molds. I got very involved in making painted molded chocolates with white and colored coating wafers and also painted milk and dark "real" chocolate. (Isnt dark chocolate just the best !!)) We not only sold everything one needed to make chocolate at home but we also made a lot of "real" chocolate items to sell at the store. Sadly, I divorced in 1997 and had to get a "real" job as the Farmers Market was only open Fri,Sat & Sunday. I had to support myself and my daughter. Even though i took a full time job i continued to make chocolates for gifts, craft fairs and to sell at work. The store was eventually sold a few years later. Then tragically in 2015, id been out of a job since 12/14( and still have yet to find work) i was sharing an apartment with my then 33 year old daughter and she had a break down, a manic episode in July 2015 and for some reason walked out on me leaving me with all of the expenses and no income. She refused to even speak to me for 4 months. I had to give up not only my home, but the majority of what was left of my belongings, including my 1,000+ candy mold collection that it took me 30+ years to build. Since October 2015 ive been relying on friends and family for a place to lay my head. I am on my 3rd place to stay and in November 2017 i lost my car in an accident. My daughter and i have repaired our relationship for the most part, but she will not take me in. She now has 2 year old son who i absolutely adore :) So if you need any super experienced candy makers just hollar !!! Enjoy the best job in the world !! I think its understandable when Steve mentions training people and things may not be up to par until the trainee has made it many times. That is with any job. There will be mess ups, lag in time and production...people just need to be more understanding. Im dealing with the same in my store. We have 3 new people and 1 has excelled while the other two are taking a little longer to learn and process the information. I love all the work you guys do. How the company seems very family oriented. Running a business you worm more hours than the average person because even off the clock, there is still work to be done. Ideas to create. Great job guys!

I made 6 of your recipes for Christmas treats for the family. The hardest one to make was the chocolate covered cherries. Made, Cow chips, plain chocolate chip bark, peanut butter chip bark, CCC, did the pretzel sticks with my own spin, peppermint white chocolate, ended up tasting like Ande’s mint and pecan clusters. I learned a lot with the chocolate, like if you want a better tasting chocolate, it’s better to use white chocolate and add a tad bit of dark cacao for a smoother better flavored chocolate then just chips.

I love these videos, how fun and happy you and your family and workers are making these great candies. I know some people complain that they can't get stuff being out of stock and such. I look at getting candies from Hercules like getting home made goodies from a grandmother. You can't get it as fast as you like, but when you get it you will be sooo happy, and the wait is well worth it. The difference between Christmas production in your old place and here is so different it blows my mind. It used to be stressful in general watching you all shoved into that tiny space but during the long hours and many projects of the holiday added to the stress that was palpable even over video. They are enthralling and you are genuinely good/hard working people. I've been moving around your videos and looked for your youtube channel and recently learned you moved into a new store this year...CONGRATULATIONS! I was a little sad you had moved out of the basement as it reminded me of my childhood during the 70s and 80s, but not surprised. I am truly happy to see your hard work paying off and the more videos I watch in your new store, I miss the basement less and less. Yay, a new video!! Hey, you should name that cream stirring machine Fred! After all the melters are Lucy & Ethel, & I saw the one video where you said the enrober was Ricky. So with naming the stirer Fred if you got a 2nd encoder Little Ricky, lol!!

I don't really like candy or sweets very much, but I do like this family! Maybe 30 years ago I used to make hand-dipped chocolates at home. I've forgotten most of what I used to know... Since I don't really care for sweets and don't think they are healthy, I doubt I'd ever make chocolates again. But part of me is thinking... that would be so nice to do again, because people always LOVED those hand-dipped chocolates and looked forward to them for Christmas gifts. This family makes me feel like it would be fun to get back to candy-making, even if I was only giving it away and not eating it myself. I remember making my flavors with things like creme de menthe (for mints) and Cointreau (for orange) and Chambord for raspberry flavor. I can't for the life of me remember how I used alcohol for flavoring in fondant creams, though. I definitely did not use invertase. Corn syrup sufficed to keep the soft centers soft. I used invert sugar, I believe for cherries that I steeped in brandy for a few weeks. Then when the fondant was enclosed in the chocolate, it would liquefy because of the alcohol. Maybe one day if I have a big enough kitchen I'll set up shop again, but only once a year and only for people I love.
