Man I finally got some candy. It was the bomb. Flavor exploded in my mouth. Please keep up the good work. Never sub out your ingredients for others. I just want to say thank you. Now if your unsure I'm here to reassure you. The candy is worth it. And so being on disability I cant really afford shipping either. So justified buy my son candy for his birthday. I’ve made brittle in small batches but never thought to put several different types of nuts in there. Usually I break it up to slivers and use it in baking cakes and cookies. Really enjoy your program. I personally apply some of your techniques in my own baking. Steve doesn’t need a gym membership, he just needs to make brittle.

I so wish i wasn't allergic to nuts :(. And can I just say thank you so much Terry. For sorting my order I was a rigjt pain in the bum. But due to living in the uk. I worked for a candy manufacturer called Powell's Candy in Hopkins MN. for many years ago as a mogul operator and I remember during the Christmas periods we made peanut brittle. It was always a treat when they came around and offered the employee's the freshly made brittle. This place has shut its doors a long time ago but it always remains in my mind all the experiences that I had during my employment. From goofing around in the corn starch room to getting slightly buzzed in the shellac room for jelly beans and other treats it was the best time of my young life. It was even ok to go home covered in corn starch and a verity of colors from the different candies. My white clothing would never last more than a day. LOL. I haven't the sweet tooth as when I did when I was young and I still can't stand candy corn any more or almost any cream candy but I still love the peanut brittle. I wish I could list all the different kinds of candy they made but it would be a long list. Spiced jellies and jelly beans to Boston baked beans and many kinds of hard candy was always on the list to make. I wish I could do it all over again. Maybe I could have even made it to the kitchen where everything was cooked and sent down the pipes. Thanks for taking me back with this wonderful video.

I have friends who make brittle for the holidays with just a microwave about 10-15 minutes a batch. Once you get the timing down for microwave it is pretty easy.. They make 3 or 4 different kinds too.

Where I live in Bundaberg, we used to have sugarcane growing up to our fence line in the backyard. It's several meters away from the fence line now. When we were kids we'd be able to eat fresh sugarcane. Well when I say eat, I mean chew on it & kind of suck/drink the juice. Bundaberg is known for sugarcane, rum, sea turtles 🐢 & macadamia nuts. The reason they bunch up is because you add them all at once, when sugar cools it hardens so it forms a cooler coating around the nuts thus sticking together. Science man.

In Trinidad we have "Nut Cake" .. It's done the same way but not pulled. Its then cut into squares before it gets hard.. If you guys do it that way then cover it with chocolate, it'll be GREAT!!
