Just a suggestion: after u take cooked idlis from the stand sprinkle water on idli and leave for 5-7 mins and when it cooks take them out...u will feel the difference in its softness and it will remain as it is even if u ato in fridge (i also came to know after getting married to a South Indian and also staying in South for so long)
