“first-ever tiffin cakes in Calcutta were baked by Barua Bakery”
Barua bakery
Calcutta since 1928.
Founded by Manoranjan Barua, this bakery was originally located at Wellington Square, not far from the current premises. Manoranjan and his brothers, Abaniranjan, Priyadarshi and Priyabrata, worked hard to develop the bakery business, which was a relatively new kind of enterprise for Bengali entrepreneurs at that time. The company was registered in 1928 and the present location at Dharmatala Street began operations in 1932 from the erstwhile smaller production unit.
Barua Bakery started business by baking open-top bread in three sizes - quarter pound, half pound and full; in those days, there was no concept of sliced bread. The breads were bought not just by local consumers, but also by several hospitals in and around the city and by the military fraternity at Fort William and Barrackpore. Eventually, buns and burger breads joined the menu. And with time, sliced bread, sandwich bread, sweet buns, ring buns, twisted bread and many other fancy varieties were introduced.
The concept of including a block of cake in tiffin-boxes was quite a new idea at that time, but it soon became extremely popular. Barua Bakery patties too, were regularly savoured by office-goers at Dalhousie Square and other predominantly commercial areas, sold by individual salesmen who picked up huge quantities for sale. The patties were once particularly popular at the football ground during matches, in this football-crazy city, especially when the playing teams were the popular rivals Mohun Bagan and East Bengal.
Deepan and Sourav, two members of the current generation of Baruas, have an old cream-coloured slip. They explain that in the initial days of the bakery, the salesmen would directly place their orders with the manager on a requisition slip and make the payment directly to the accountant. The production was based solely on pre-orders - nothing extra. It was all done manually, but it all worked perfectly.
Barua Bakery still does not have any exclusive retail outlet or even distributors. The cycle-vans continue to carry the products straight from the ovens to the retailers and shops, for sale and door-to-door supply.
