Becky... First of all... I have 3 dear Beckys in my lice, wonderful women, all so unique and extremely special in different ways... And now I meet you!!! What a joy to find you.... I know you probably won't ever see this.... But I lost my mom 20 years so this week...And your chocolate fudge was her Halmark!!! You make it as she did, except..no marble slab, and she put the butter and vanilla in ,both at the end off the stove I've made this for years... But felt compelled to watch this after looking for and finding a vanilla fudge recipe.... You are a GIFT!!! THANK YOU!!... I love your down to earth,decent ,strong woman character that oozes out of your every pore.... Your interaction with the various people that are living life, real life....right there I. Your heart of the home,your kitchen!!!I hope and wish the best of everything for you and yours..... I think you should be national treasure,or at least a household name !!! I am really and genuinely joyful and thankful to hit upon your channel. God Bless...And thank you for bringing my mom to the front of my heart and mind today.... And I truly hope your mom and sister are fine now, I know this was videotaped over a year ago, s so hopefully all is well! Thanks again...... Now I think I'll have to find me a marble slab!!!!as I think that granite countertops may not work for me ( but I'm gonna give it a try!!)

Thank so much for watching! My gramaw always put the butter in with everything else...I’m not sure why others do that...but it doesn’t make any difference with fudge. However, I will do that when making puddings or pie filling. I’ve never used half n half, so I can’t say for certain..but I would think it would be Ok 👌🏾 😁. If you don’t have a slab, allow it to cool in the pan for 55 minutes.. I got the sheet rock utensil at Lowe’s👍🏾 Try this out it is WONDERFUL! Thank you, I appreciate that!💞💞💞

Hi Phyllis..Thanks for watching! If you’re using a marble slab, it can be poured on immediately after reaching soft-ball stage and allowed to cool 9 minutes. If no slab, then cool in the pan for 55 minutes then stir.

Dear Lord, I love this video….and that is now HUGE slab of marble. Have you ever made homemade butter mints? You do the same thing…pour it out on buttered marble and start manipulation….then you pull it like taffy…then cut into pieces with scissors. Love the family in video too

@@BeckyIntheKitchen I made the fudge, Becky!! I forgot to buy the Karo syrup, and I used Country Crock Churned butter because I forgot to buy the real butter, which was just fine because it turned out really great. What temperature do you cool it to? My recipe says cool to 110° before pouring. But, once it gets that cool, it's like a taffy consistency and it sets as soon as I start stirring it. It tastes good, but I definitely can't spread it in a pan. I just mash it out as much as I can.

Hi Becky, I know that the gold standard for fudge is creamy and people look at grainy fudge as a fail. HOWEVER, my Mom always made what she called "quick fudge" and it was always grainy so I got to love it that way. Is the graininess from undissolved sugar or from the dissolved sugar crystalizing? And how could I alter the cooking to get a grainy fudge?
@BeckyIntheKitchen
@BeckyIntheKitchen 3 жыл бұрын
Hi Robert! Thank you for watching! I would say it’s more than likely from the crystallization. In some videos that I’ve seen, the preparer skips the cooling process. So, that in turn would make things “quick”. I would think that if you did that as well, you would get a grainy type of fudge, like your mom would make 🤗 and have all the memories! Let me know if that works! Appreciate your thoughts! Thank you for sharing 💞😊
