You need to season it right before you cook. Heat up some grapeseed oil just till smoke point then drain oil and wipe with paper towels. Now your ready with oil of your choice for frying. No need to get it ripping hot. Medium heat is sufficient.

If you are thinking these will perform like nonstick then you will be disappointed If you want pans than look premium and cleanup great, these are the choice Best way to describe them, they are semi non stick. U can't season them, the nanobond is slick enough that the oil doesnt sink into the pores. But, done foods can. Don't believe me? Cook dumplings or fried rice in them for instant proof. I love these pans. But I need to compliment it with a true non stick. That's my honest review.

I have the 8.5" skillet, the 2 & 3 quart pot. The pots are wonderful but that 8.5" skillet is a pain at times. I preheat the skillet and no matter which method I use some foods always stick.

I just bought the set. They are wonderful to cook in. They clean easily. It doesn’t stick when cooking eggs. Steak, fish or chicken everything so far, has turns out great.

Can I use metal cooking utensils in these pans and is barkeeper's friend safe to use to keep the cookware shiny or are these too abrasive ?

Yes you can use metal utensils on these. Your pans will come w their own cleaner that works better than Barkeepers friend.

Own a hestan nanobond 5 qt. Don't care for it if I'm honest. Does everything I've seen other pans do. Looks super nice but clean up is same as any other nice stainless pan. Rice and eggs stick unless it's well buttered/oiled. Its hard to handle easily. Going to return mine and go for an amazon commercial one.

With the pan at the right temperature and with enough oil or butter, any pan no matter regardless of price will release a fried egg just as easily.

Yeah but it's that garentee that your not getting nickle or cromium leached into your food from the titanium layer also titanium doesnt scratch easy if that at all .... but if your gonna go with a plain old stainless steel then go with a brand that doesn't source there metal from China .. I did weeks of research and most companies won't show where they get there steel from but hestan steel is manufactured in italy and there proud of it.. plus it will last generations to come.

For me its simply vastly too expensive for what it is ....A quality stainless steel pan......Anything triply with 2.5-3mm thickness properly heated up will do exactly the same ie Viking, Calphalon, Cuisinart, Analon, All Clad, Heritage etc

I used to make my EX-wife a one or two egg omelette several times a week for years. It was using our own free range chicken eggs that were orange in color, not a sickly yellow like you find in the supermarkets or restaurants. I used my Allclad 3-ply SS to which I had a large collection. (That is until the divorce when she stole every last one of them....but I digress.) With simply understanding your tools, you discover that proper temperature does wonders to make things not stick...for the most part. My omelette's slid right out of the pan every time and onto the plate. I now have Allclad copper core 5-ply's, and love them very much. I admit that the price they charge for these pans are nothing short of ridiculous! I also use a lot of old cast irons and love them as well. However, when I saw the price on these Hestan pans....although gorgeous to look at, I think it might be more for the pretentious rather than the serious cooks. My time and money is better spent on honing my cooking skills. Oh...and yes, my Allclad copper cores can also fall into the "pretentious" as well, but I only bought them because she stole my 3-ply's which did a great job for a lot less, but pride made me buy better than what she stole from me. That is my own personal failing that I will just have to find a way to live with. ;) I think I will also post this on another pan review site I was just ranting on prior to checking out this one. Good job on the review though. Beautiful pan indeed.

Sorry about your pans, that sucks. Being a professional chef and restaurateur I use All-clad, cast iron and carbon steel pans in my restaurants. I also have all of those in my home as well as these Hestan pans. It's funny you say these aren't for "serious" cooks. Meanwhile at the French Laundry, Per Se, Benu just to name a few restaurants, use Hestan pans and ranges. Now I do agree that these pans ARE expensive and can come off as pretentious, but people buy expensive pretentious things all the time, cars ,boats, grills, smokers, jewelry, yada yada. I don't see this as any different. I do flex on my chef friends with these pans! I really do. Haha..but these pans still do the job. And you are absolutely correct about heat control and technique. If you master proper cooking techniques, you can cook using even the cheapest pans, although they won't last as long as all the pans we mentioned above. These hand crafted pans are quite beautiful, and do a wonderful job. Just like my handcrafted Japanese knives that I use. Could I also buy a cheaper Global? Sure, but sometimes we want to splurge on some "finer" things and that's all good too. I do appreciate you taking the time to watch my video and thank you for your response. @@cheftuan I do agree that my remark about "serious" cooks might not be my best phrasing, where "professional cook using them in the restaurant day in and day out" might have been better, but it does still hold true. Would you as a restaurant owner "seriously" go out and purchase it to use in your restaurant every day? Or, if you are the chef in anything but the most prestigious of restaurants...Would you dare to request such a purchase when there are definitely cheaper and just as effective options available? In reality, you as a true serious chef, will no doubt be in the minority of those that purchase these sets. (Although you do admit to the bit pretentious part....as do I.) Most will just be buying for the novelty and the outrageous price, which leads to the pretentious remark. Of course we want the finer things in life in all things, but is it really that much of an improvement to justify such a huge price jump? Yes.....absolutely gorgeous...and hand crafted! That appeals to me in so many ways. I also love that they are lighter, which may actually have me purchasing a pan or two because the Leo in me sometimes overrides my common sense. ;) Thank you for the enjoyable conversation. They do scratch though, especially if you're using stainless utensils. These never scratch they will remain smooth and shiny like this unless you really hit them with some hardened knife steel or ceramic.

To a few nay-sayers - it’s a better pan. Better handle. Better surface than stainless - slick no scratch- and rivets are no fun. Tell me you love rivets… tell me you don’t care about rivets… I’ll tell you you’re fibbing. I have a lovely curved bottom saucepan that I use constantly. I’m not changing out all my cookware. I love my All Clad. But I am looking at their largest chef skillet…

Not perfectly cooked yolk, if tge egg is not known it came from it must be cooked better. Possibly the pan is good, but egg wasn’t cooked well

I spent $3000 on my set of Heston Pans- Listen up guys, do not buy these pans - they are the worst purchase of my life. Everything sticks, and they are super temperamental. Relatively speaking the worst $3000 I have ever spent. We were in a bed-and-breakfast, and I now refuse to use them. Depends I bought for $150 work much, much better. Explain that!

You sound like my buddy who's not very good at cooking. Once I taught him how to use the pans, he went and bought a set. Idk your level of cooking, but if it's good enough to be used in 3 Michelin star kitchens, then it's most likely a user error. I'm sorry to burst your bubble. Try them again. Have a good one!

Sounds like they're responsive and you don't have any experience with Stainless steel or preheating a pan? For 150 did you buy a set of pans that are aluminum with teflon? Also, I'll buy them off you if you're not interested in learning to use them if the price is right 😉
