2:10 he says most important thing! SUNFLOWER OIL. High iodine value, yet fully non-cancerous when hit up. This is the same secret I discovered. If you use cast iron, and want non-sticking effect - this is the secret. This grill is basically massive cast iron pan.

Actually, teppanyaki (and flat-top grills in general) are made of stainless steel and cleaned with pumice bricks after hours or between uses. Sunflower oil is used here due to the prevalence of frying noodles and because it has a higher smoke point than other oils, negating the need for zoning your grill temps; more usually, olive oil or simple canola is used :) Although, you are spot on with the cast-iron tip

Literally a bucket of basic quat, changed every 4 hours, and 40 seconds of soak in between uses negates your comment. (If youre thinking a machine, think again; the sanibox is an alternative, not a requirement. That's why the 3-compartment / pan sink in every kitchen with a dishpit never has one but has a main quat line ) Honestly, most of you should really invest the $150 bucks into a ServSafe certification before opening your mouth for speech OR food... You are dangerously underinformed, to be engaging in either activity, lol.

i have no problems with this chef, and he's very good at it, but just wondering, since it's a "japanese" restaurant, don't some people feel cheapened or ripped off if their server isn't japanese? It would be like me wanting a german car made from germany instead i get one made from china. Or imagine going to a caribbean restaurant except it's owned by chinese and cooked by chinese chefs. Anyways, he's a fine chef, but always just thought it odd when i see a filipino or other non-japanese working at these teppanyaki/hibachi restaurants.

It's not Japanese either. Not one of the chefs is Japanese. Being from Japan, it's obvious by their accent. Also, their showboating theatrics and food is purely American. Both the cooking style and food are completely different in Japan..

Dave's World 77 -Umm, sorry to disappoint you, but nothing Japanese at these "hibachi" restaurants. The food is definitely not Japanese. You would never find any of it served to Japan. Yeah, it's a teppan grill, but the cooking stylist totally different. The chefs are Asian, but they're not Japanese. Big difference - culture and cuisine vary greatly country to country.

These places are so overly priced. It's criminal. Some hibachi places have really good fried rice (Benihanas is shit) and for a meat eater, I like the vegetables with the ginger sauce but everything else do at home and save your money.
