In the U.S., the phrase “hibachi-style” is occasionally used to refer to what is really teppanyaki cooking. Hibachi grills are called shichirin in Japanese and are small, portable barbecue grills that are made from cast iron. These grills have an open-grate design and commonly use charcoal as their heating source. Modern hibachis in U.S. restaurants are electric so that they can be used to cook food indoors. By contrast, teppanyaki grilling involves using an iron griddle with a flat, solid surface to prepare food in restaurants in front of guests.

True, and you are correct. However, the high heat of the grill is sufficient to heat the instruments enough to kill most bacteria; keep in mind this grill is not your average frying pan. If you notice the beginning of the video, the oil quickly smokes, indicating that the temperature of the grill is roughly around 300 degrees C. Flash point of oil is about 327 degrees C.

I am Japanese living in Japan. This chef is not Japanese. The majority of Japanese chef will carefully handle the food. Japanese don't like flashy too performance, such as compromising the taste. You have visited Japan and then expect to eat authentic Japanese cuisine. I'm sure I think you remember impressed by the delicacy of Japanese cuisine.

+DJ Rapi (DJRapi) It's in America. There's plenty of "Japanese" restaurants that do this kind of ... showmanship. Americanized Japanese Grill. Which basically means, American food with Soy sauce.

It's a three sectional flat-top grill. If you notice he only cooks on the middle section, most likely (our) left side is set on low to warm up the noodles/veg, and the right is set on cool to cool down the food.

I'm Japanese Tell. This is a Japanese cuisine. However, it is not the Japanese. Japanese traditional ones. Japanese cuisine, including well as such as "curry rice" and "Katsudon". So, this is but a Japanese cuisine, it is not the Japanese.
