Based on what I know, GPDR is exactly the disadvantage. What happens when customer sends a request to delete all records about her. How do we find in a company all events that contain customer's information and remove them upon request?

A solution to this problem is that you encrypt the fields of the user with a per-user key. if the user wants his data deleted, you just delete the key. This makes the customers data undecryptable and thus is the equivalent of deleting it. Of course you have to rebuild your projections as well.
