An unforgettable dispatch of time through Mary's eyes is the time well spent. Cleaning filming and I did attempt to help myself to some of your delectable homemade food Mary, but you know what screens are! Your History through your eyes is always memorable..........

Absolutely beautiful, all of it, from the sheep (of course) to the happy cows, the frog eggs to the mole runway (very unusual and interesting), the gorgeous scenery to Derek’s hilarious antics, all of it is a joy to watch and a welcome respite from the ordinary. Thank you both for letting us step outside our daily routine and taking us along. And yes definitely explore the path not yet traveled so we can enjoy more of your beautiful country. 🤗🙏🏻💚

Here it is for you Peter - I will also add it to the description! 200g Self-raising flour 25g Ground Almonds 1 tsp Baking powder 75g Muscovado sugar 4 Medjool Dates - chopped 50g Sultantas 3 Bananas (very ripe) - mashed 50g Coconut oil - melted 3 tbsp Soya milk 75g Walnut pieces *Heat oven to 200C/180C fan/gas 6. *Line a 450g loaf tin with baking parchment. *Mix the flour, almonds, baking powder, sugar, dates and sultanas together in a bowl. *Beat together the mashed banana and oil, then combine it with the flour mixture, stirring in the the soya milk and folding in the walnuts. *Pour mixture into the tin. *Bake for 1hr - 1hr15mins, covering the top after 30mins to avoid it looking too brown. *Insert a skewer into the centre of the cake ensuring it comes out clean. If not, return to the oven and cook a little longer. *Cool for 15 mins before taking it out of the tin.
