I love how you have such deep interest, in the subject matter, and the way your voice seems to make the experience feel like I am with you, even though I am viewing it through a computer screen. I like the way you explained about the color changes. Could actually see it when you brought the fish up. Love the way you used the pressure washer to scale the fish. I must say you have this canny ability to use implements in different ways (or is that just an excuse to use power tools?). I also like your very large cutting board with the squeezi to clear the water off 👍👍
Why do you always split the head in two parts when you want to eat it? It always looks like a lot of work but it doesn't seem necessary to me to be able to cook it and to eat it neither? I'm curious about that. I love your videos, you're so cool :*

I'm not experienced, but my guess would be that it let's it cook more evenly and exposes more of the meat
