As many of you know, Dr. Bland has had a superfood project he's been working on for the past two years. In April, we took a HUGE step forward. The first run of organic, US-grown, craft-milled Himalayan Tartary Buckwheat Super Nutrition Flour became available through Big Bold Health. Last Sunday, Jeff cooked up some HTB waffles to celebrate the moms in his life and they had a delicious and healthy brunch. Here is the cooking demo, a first for Jeff! Enjoy!
You can learn more about this flour and the other products Jeff has formulated by visiting www.bigboldhealth.com.

Made these tonight, minus the pecans and nutmeg, and used macadamia milk instead of almond milk. Also added Lily's sugar free chocolate chips. They turned out superb. Recipe made seven 8-inch pancakes for me, with each pancake measuring 1/2 cup of batter. Topped them with Lakanto syrup, and also with Lakanto Suntella but the latter was unnecessary because the syrup is enough. Only problem is that one pancake is just 1/7 of a cup, which isn't enough to get the nutritional benefits stated in one serving size. So I'll be adding the flour to my smoothies as well, toasting it first as Dr Bland recommends.

It tried to make some pancakes with the flour, but don't want to use eggs. I ground some flaxseed and soaked it for quite awhile before incorporating it. I also am now thinking if using a banana for sweetness. What do you think. The ones I made so far were tasty

Isn’t this almond milk full of weird ingredients? I would love to hear your perspective. I used to buy it but after reading the ingredients, I now only buy the ones with only almonds + agua as ingredients.

There is tartary buckwheat tea quite readily available in the Chinese herbal shops in Singapore. They seems to be from Mongolia, growing at above 2500 m above sea level. Are they the same or similar to the himalayan type ? The name is 苦乔茶。 also those from Japan and Taiwan.

Is this kind of “flour” keto friendly since it consists of resistant starch?

We do recommend at least "toasting" the flour in the oven before consuming. This even helps activate the phytonutrients. :) Have your tried our HTB shake mix? bigboldhealth.com/product/superfood-advanced-protein-shake-mix/

Hi! I'm in the same boat! I made a big batch and made waffles then froze them! I took them out of freezer and popped them in the toaster and they were just like eating them fresh! I also left out the cardamom, ginger, cloves and nutmeg and topped with blueberries and shared a a waffle triangle with each dog (we call them woofles)! We all love them as a special treat!

This stuff is bitter and terrible to bake with. I've made pancakes and had to choke those down with maple syrup to cover the flavor. Today I made muffins which I may use to plug holes in the brick. Such an awful texture, and of course bitter taste.
