Using good milk in the hot chocolate makes a difference! I recently got raw milk from a friend, all the cream intact and everything. (Not always the case sometimes around here). Anyway, super thick cream. I skimmed off a good bit but couldn't really tell where the line was. Turns out I could have skimmed more, but the milk that was left was like the best whole milk ever!

I believe you have to let the citrus and vinegar sit at Least 2 weeks

After about 3 weeks the color of the vinegar I was making with citrus peels turned golden color, and the viscosity changed. No more vinegar odor, just smells like orange/grapefruit/mandarin scent.
