There are few collectors of vintage espresso machines in the world, and we met one of them, Henk Langkemper, during the World of Coffee in Amsterdam. His collection includes over 110 espresso machines, and he talked about the evolution of espresso machines from the beginning of the 20th century until the 1980s. So take a look!

I like the la marzocco poker. It's interesting as it's quite square and sharp in it's look and not shiny and curvy but more industrial looking and still old fashioned! I'd love to visit this exhibit some day 😊

As someone who does a lot of repairs on espresso machines. I personally think that the best espresso machines are still the spring pistons. They make amazing espressos with the declining pressure profiles, coffee flows out by compression of the spring with no vibration coming from the pump. They last so much longer than pump driven espresso machines. Modern espresso machines, that try to mimic such pressure profiles by adding excessive and expensive components, make it prone to failure and expensive to repair. I'm not a big fan of double boilers, you have one more boiler to headache and the water from the brew boiler isnt' fresh as it's stored in it forever, displaced by fresh water with each extraction but never totally replaced.

Thank you, Linda, for valuable comment. I think we hear that from many people in the industry but of course, there are some advantages of the modern espresso machines for the baristas and cafes. We hope to learn more about the espresso machines and perhaps make a video about lever machines only.

But it’s doable on the cheap. Take an inexpensive “consumer appliance” espresso maker, add a cheap thermometer and a dimmer, and voila! You don’t get as wonderful a shot as a spring piston, but you can approximate the temperature and the pressure. The thermometer gives you the correct starting temperature. With cheap appliances, that temperature will fall - just as it does with the spring piston. For pressure, you start the shot with preinfusion. Then you turn down the flow via your dimmer. Wait 5-10 seconds, then turn it up full… and gradually diminish the flow over the course of 20-30 seconds. Stop the shot when ‘blonding’ begins.
