That is a wonderful recipe of old and i remember when i was a kid, my mom and I use to eat home made headcheese sandwiches. Thank you for making this. Such a great recipe. Nothing like cajan cooking. I'm originally from Northern Minnesota and moved to North Carolina. I grew up eating hog head cheese and still make it using the whole hog head. I use pickling spice, salt, pepper, fresh garlic, fresh onion,and vinager to season! Definitely gonna try your version! I also add the tongue and heart.

Great job Captain. As a New Orleans Firefighter, I can assure you I keep my share of head cheese in our refrigerator and a box of those buttery crackers in the locker for a snack between lunch and dinner. Next time I’m in Lafayette, I have a station shirt for ya. Stay safe bother Coby.

@@captaincobyscajuncooking6144 I did not. The name alone grossed me out. I wouldn’t let anyone tell me what was in boudin because I probably wouldn’t eat that if I knew what was in it. Now that I know what this is, I have already added the meat grinder attachment for my Kitchen Aid to my Amazon wish list. Can this be frozen or canned if you won’t be eating it all at once? (I am a rebel canner. The alphabet agencies don’t have to approve what I am doing.)

Grew up with head cheese(souse) in Alabama and Mississippi. I like a little vinegar, bell pepper, and onion in it. Pepper is what sets it off though.
