Made this a few days again, firstly my sauce didn't look as dark as yours and I thought it was rather bland on the first taste. Left it in the fridge for a couple of days, added some chili and a bit more soy sauce and it was fantastic, way better than straight out the pan. Will defo do this again and leave in the fridge for the next day.

I've made a lot of Chinese and have found that pearl river bridge sauce is the best for using 'dark' soy. It's a mushroom base soy. I got mine on Amazon. A Thai friend told me that's what the restaurants use. It does make a big difference. I also add a drop or two of liquid smoke. My wok isn't as flavored as the restaurants. That makes it taste really good!

Once cooked and rinsed in cold water, drizzle sesame oil over them and toss them 👍

Oh. Oh you bloody woman. Wondering what to do with the kilo of banana prawns I got today, this would have been perfect *but* I used the last of my spring onions and cabbage yesterday. Bugger.

Get yourself some garlic shoots and make a prawn and garlic shoots stir fry. You literally only need soy, Chinese wine, white pepper and a touch of sugar. Serve with steamed rice
