You realise this is a movie, right. Also there are probably a lot of mobsters who operate within hotels and mafias so in real life he may very well have done the same if he felt his job/life was in danger and that this person was above the law/very powerful. But once the cops showed up, and went to investigate, they would've found the movie, and everyone would've realized it was a trick. By the time the McCallisters showed up at the Plaza later on, the staff were fully aware Kevin had tricked them in order to escape.
