Trying this yeast in a Maibock - OG @1.071 - fermented at 18C for 1 week, ramped to 20 and 22C over the next week. While fermentation was energetic and apparently complete in 5 days, I did notice a secondary fermentation starting at day 8 or 9. On Day 11, FG stands at 1.018 or 1.020 or 7% - I'm leaving it where it is for a third week and then I will keg. The sample unfortunately has little bite, and seems too sweet. Time and lagering may help. I get a HINT of diacetyl. On the fence about this yeast. Love the concept - a non fussy dry lager yeast that ferments well and delivers a fine tight yeast cake. Unless the beer sucks...Cheers.

Did you say " Clean Christmas"?

Used this recently at 18C. Diacetyl was a problem even after ramping to 22C for 5 days, and flavours are not clean. Fermentation had some issues with H2S too, and never cleared. The most problematic yeast I have used to date. Wort was simply 2 x 1.2kg of Extra Light LME with SG of 1042.

That is interesting, I have not encountered the same issues. I’d be interested to know how you go if you used this yeast again.
