I want to say thank you for the video, Linda! I want to say that I had recently made a batch of 10# of onions. I used Vidalia/sweet onions. They did not carmelize well. So in my research-it led me to the Onion Board. Within the FAQ's this was mentioned that sweet/Vidalia onions simply do not carmelize as well as what they call "storage" onions-the simple yellow onions. The water content is so high in the sweet onions that it turns into a big pile of cooked onions but not caramelized-unless you're willing to spend over an hour over the stove. They suggested for the best consistency in quality of your French onion soups, etc to use the 'storage'/yellow onions. Thought I'd share--and let any of your viewers who may have experienced frustration that it's not them! It's the onion.

I just made this and it is so good! It made 14 pints. I used burgundy wine as that's what I had. Also used 1 1/2 cups of clear jel. Used 1/3 button mushrooms. Less clean up with the dishes than I've ever had canning. Doesn't need cream. Thanks Linda!

Hey, Linda. I LOVE this video and I'm going to use your recipe to can some wild mushroom soup. We just got a TON of King Trumpets, Enoki, Shiitake, Maitake and more! We don't consume GMOs and Clear Jel is GMO. Have you ever used Cornaby's Ultra Gel? It's gluten-free and non-GMO. It's supposed to be the same as Clear Jel. OR...could I just thicken our soup when we open the jar with a little organic potato flakes we've dehydrated from our own harvests? Would that alter the flavor too much? THANKS SO MUCH! I want to make this the only thing is I have to use beef base that I make on my own, am learning that many of those meat bouillons still have some tint of MSG and that gives migraines to my youngest. Is there a way to make this recipe and do it with broth we make on OUR OWN?????

I would have to take all the black fungus out because you can chew those for days and it's like trying to eat a rubber band! When I do french onion soup I peel and cut at a minimum 10 lb of onions! And that makes enough soup that will last maybe 3 days?? I will shovel that stuff in with Swiss cheese and a crouton every day of the week if I could! :-)

+Sam Stevens The only thickener tested for canning is cooktype clearjel for jams. It's not even tested in for pressure canning for low acid foods as used in this recipe/application. Best to thicken upon opening a jar if wanting to keep within tested canning recommendations.

This looks very good, but Clearjel is not ok for pressure canning, even if you are successful with it (jars sealing). I have looked at all the sites I can to see if it is possible to use it for that (universities and the gov), after you open the jar yes, but it is not approved for this. I am also a bit worried about the wine, as I cannot find any info on using wine like this? I have my mushrooms (what a ton of them) and the onions too. I also have the wine because since the alcohol evaporates I feel this would be ok. But I will thicken later just in case...I don't have enough experience and am not a master food preserver (wish!) either to know enough. I did order the clearjel though through Hoosier. Also what is the liquid in the mushrooms that are soaking?, sounds like you say liquor? Or liquid? I am not clear on that. All my mushrooms are fresh and I am using 4 kinds.

+onlybev1 I know it is used in canning but it was made for the food industry, but I only see recipes for water bath canning, if you look at Ball's Complete Book of Home Preserving, University Canning Web Sites, other tested sources I can't find even one recipe that has Clearjel for Pressure Canning. So that is my worry, I see many where it is used in Water Bath Canning. I want to be sure, we have to be sure to be safe. I have a feeling the density of the end product will be the issue for Pressure Canning. Because it has worked for someone else (and I do admire Linda's work greatly) doesn't mean it is ok to do it.

Laura Brito I wouldn't use it in water bath canning, but with pressure canning it is okay. I have used it many times, but you have to go with what your gut tells you.

clear jel, thermflo, and one other(do not remember the name) are created so that they do not thicken when initially cooked and only thicken once they cool down. this eliminates the problem of cream soups getting too thick during the cooking process (water bath or pressure)
