I love using this in my home canned chili beans. Gives them awesome flavor and no need to add other spices. No need to add the vinegar as it will be pressure cooked with the beans.

I make this same salsa, but I take my immersion blender and pulse it a few times, leaving some chunks mixed with some smooth.

A few years ago I tried this just for fun. WOW I was surprised. I now have this in my pantry. I still have a few jars of the name brand stuff, but I'll probably be giving them away. In my opinion, Mrs Wages, by far, beats the store bought stuff, HANDS DOWN.

Sorry you had that learning experience. I watched your other video on canning Mrs Wages salsa and tried it. I opened a jar today, diced some fresh onion and chopped cilantro in in and it was really good. Didn't really like the taste right after it cooked. Was a good surprise. Thank you.

I am so excited you made this salsa. My friend gave me a jar of her Mrs Wages Salsa at Christmas and I couldn’t believe how awesome it was. I just found a package of Mrs Wages at the grocery store and grabbed it. I thought I would have to wait until my garden came in but now I’ll be buying diced tomatoes and make myself a batch!!! My “sharpies” and they are the actual “sharpie” brand wash off in the water bath canner. So I have started using a paint marker if something needs labeled before processing.

What are your suggestions for the most reliable lids? Kerr, Ball, FORJARS, TATTLER, HARVEST GUARD, etc? I’ve heard that some don’t provide a good seal. Any real difference between utilizing them in either the water bathing or pressure canning methods? Also any best suggestions when taking off the lids from a sealed jar to prevent damage so one can reuse them. In your experience, how many times are you able to reuse them. I would imagine the rings would last indefinitely as long as they do not get damaged; EX: dented or rusted. Thank you in advance & thank you so much for what you do & helping provide the knowledge & experience that you have gained!!! Keep it up!!!

I've used them all. They are all good lids. However, for one time use lids I'm currently using the Forjars lids. I appreciate that they made a great effort to get lids out during the shortage when it didn't seem that other companies did. Their lids are very good quality and I've never had a fail with them. There is not a way to remove any one use lid to make them good for a second use to can with. I put a big 'X' on them and use them for dehydrated or other things I store in jars.As for the reusable lids like Tattler, I have used them for a long time and they work great too. I like to mark the little gaskets with a sharpie marker so I know how many times I've used them. I hope this info helps you.

@@2leelouCreates Some have said that some lids don’t seal properly. Not sure if it’s the actual lids or the person not following proper procedures. As for the FORJARS lids makes sense that they’d be able to keep an ample supply forthcoming since they’re apparently made in China. Good tip to mark the gaskets, have already thought of doing that myself.

@Judten1 Mrs Wages has already added it. In some cases, the instructions will tell you to add vinegar or lemon juice or sugar or whatever additional ingredients may be required, but everything else is already added in the mix. They make it so easy.

What are you going to do about the canner? I have the same one. I have used it to death and it still keeps working. Now I'm worried. Did you contact Ball? So, the salsa looks better than my fresh recipe. I like that it is thick and chunky. I have a giant can of diced tomatoes to use up. Now i know what to do with it. The difference wasn't huge. I like the hot best. But I like hot salsa. I've had my canner about 5 years and used it a lot. I'm not sure what can be done about it.

@@2leelouCreates I was having problems with mine. If you try to adjust the temp it would stop boiling. Called Ball and asked a lot of questions. Unfortunately, the canners are NOT fixable. I don't have any problems as long as I don't try to adjust the temp down.

I can’t find Mrs. Wages products locally and they are outrageously expensive on Amazon. If this economy ever settles back where it ought to be, maybe we will see products on the shelves again. I’d love to make this and the ketchup! My tomato plants are huge and producing, and I will want to can many of them, of course. I will save your video when there are products to buy at a reasonable price again. Pomonas Pectin is the same way.

The package says 40 minutes for less that 1000 feet, seems extreme, but can’t don’t a recommendation other than that. Is there a reason for the extended time?

I can't officially answer that but my guess is that the dehydrated vegetables in the packet need time to reconstitute and then process.

For me it was much easier than having to blanch and peel skins from tomatoes and chop onions and Jalapeños. I've made salsa from scratch and this was certainly a lot less work.
