🍒I used to Love making Cherry Jelly! The best part (besides eating on biscuits!) was the preparation. I washed the cherries, threw them in the blender - zip, zip! - poured them into a big pot, and simmered them about 10 minutes. Drain into another large pot. (Compost everything from the colander.) You can put your cherry juice in quart jars in the fridge until the next day or go ahead and make your jelly. I always used straight juice in the recipe with very little water. I used the recipe in the Sure-jell box. 🍒

I have been using a veg peeler to get pits out. The rounded tip that is used to get potato eyes out can also be used for digging out a pit. The peeler I use is 1 of the old metal peeler, not a Y shaped peeler.

Just so you know...guage problems on Those steam canners is really common. Just stick a thermometer into one of the holes on the top until you are familiar with how much steam blurps out the sides of the lid when it where it needs to be..then you will know how often those steam blurbs should occur and be reassured you are in range.

The straw tip is a great idea..I recently made cherry sauce with 2#...and, the cherry's didn't need to look pretty...I did the pitting by hand using a fine knife and slicing the meat around the pit..took a long time as you would expect..the cherry sauce was so good...used it to put in some empanadas as a filling. I also used some of the sauce as a glaze for a chicken. So many ways to use cherries ! Love your videos. 💕

you can use your pressure canner as a steam canner, once it vents a stream, instead of putting the weight on, you start your timer, you just need to add an extra inch or so of water

I use one of those pitters where you put several in the hopper and press a plunger that pushed the pit out into another little bowl you can slide out and dump and it is STILL messy. It does them one at a time but the next one rolls back in behind the last one when it rolls into whatever bowl you're using. I believe I raw packed mine in an extra light simple syrup and I didn't add any other spices. They are SO good in cobbler!! I don't thicken like a pie filling in the jar - I just do the syrup and thicken it on the back end or season or whatever. I also did me some rum cherries for adding to rum and coke on occasion and it's pretty tasty too. Those sweet cherries are yummy! So so good. Enjoy!
@ford4life069

Forgot to add, I have that exact steam canner you're using to waterbath (I love that it's dual purpose!!) And you absolutely can buy a new gauge for that lid. Unscrew that one and put the new one on. I'm glad you mentioned that because now I'm going to buy an extra gauge to keep handy because my stove won't boil a whole waterbath! It just won't. Takes 4 hrs to come up to a boil and that's if I use HOT faucet water to start with. If I boil the water in my teapot and other smaller pots and dump in, it takes abt 2 hrs for the waterbath to come up to a boil. It's dumb how bad my stove is! Gonna replace it with a gas one soon. I have a presto digital canner that if I have to waterbath, I can use it. That thing is amazing since my stove is so janky. 😊
