Carol a little trick, I stick the small end of corn in the hole of a bundt pan to cut the corn off. The corn is more stable while cutting and the kernels fall off into the pan.

I smoked my corn, husk on, with hickory wood at 225 deg for 3 hours. OMG!!!! THE SMELL AND TASTE IS AMAZING!!!!

This is the bomb as a base for southwest and Mexican soups. So good!!! This recipe is what forced me to learn pressure canning so thank you!!!

Thanks for this recipe. I never would have thought to use the corn cobs to make stock. I did today, thanks to you. Such a delicious sweet corn flavor. Thanks for the inspiration. I grilled the corn instead of roasting it in the oven as not to heat up the kitchen. Used the corn to make corn relish. Another amazing and delicious recipe. Keep making your awesome videos. I love watching them.

I love this! I made my 1st batch last week, after buying a dozen ears of just picked corn :-). I did not roast it, maybe another time, but it's just too hot! I used a cup of it as the liquid in the Instant Pot, added 2 chicken breasts, trivet on top with chunks of potatoes and carrots, pressure cooked for 4 minutes. Pulled out the chicken and veggies, stirred in a little bit of diluted corn starch and made a gravy. It was delicious! Thanks for the inspiration!

This is a great idea! I usually make corn cob jelly with my cobs but I really like this idea!

Wow! Never heard of this stock before, would be wonderful to use in soups and chowder for added flavor. Love squeezing every ounce of goodness from the foods we would normally toss out. My favorite is all those turkey bones at Thanksgiving for stock.

Belinda I simmer the turkey bones in water for several hours adding vegetables like onion, carrots and celery. Then strain and pressure can.

Oh that would be good! I bet I could put them in my smoker (without any chips in it) and then on the grill for an entirely different taste!! Come on corn season!!! Thanks Carol for a great idea!!!!

Corn chowder is one of my favorites to make but I have never used corn stock. I’ve never heard of corn stock! I’m excited about this and will definitely make some very soon. Thank you for this inspiring twist and your recipe! ☮️

Thank you for this video, I have never seen such way of roasting corn, marvelous idea! We mostly eat boiled corn on the cob around here; I've always thrown away the water, at best I've been using it to water my plants (lucky lemons:)). What a waste; it will never happen again, thanks to you.

Found your channel through one of my freeze dryer groups. Never heard of corn stock prior to so I'm interested to try it. Love your personality so I subscribed! Processed 8 dozen corn today and sadly found your video after the fact! Keeping it in mind for next time though 😊. Looking forward to watching your other videos.

Yum! Do you ever leave your onion skins on when you make stock/broth? I love the golden color they contribute. I’m thinking the onion could roast along with the corn for an additional layer of roasty goodness. =)

Cindy Moore yes, often I do and garlic as well 😉. For this stock I didn’t want anything to over power the flavor of the sweet corn. But I’m thinking you have a fabulous idea with roasting them (and garlic)! I think I’m going to try that next time as I’m sure this batch won’t last long lol. I am making mine right now. I do this every year. its so sweet. I leave it plain. just water. we only get fresh corn once a year in upstate ny. its a treat

This has become a favorite broth for me. We are vegetarian and a,ways looking for ways to flavor broth for soups etc. I first saw this video three weeks ago and am absolutely hooked. My third batch is on the grill right now. I made a corn broth soup with cut up potatoes, green beans, onions, corn and orange peppers. Just what I had on hand. Added salt, pepper parsley and Italian seasoning and it was fabulous!!! Thanks so much for sharing this. It is wonderful and I had never heard of corn broth before. The added bonus is the corn is yummy and sweet too!

We used our cobs to make corn cob jelly but I think we might have to use half for this. Thank you!

We grow a lot of corn most years; between five and seven hundred row-feet. Usually I just toss the cobs to the chickens. From now on the chickens will get slightly onion-flavored cobs that aren't as juicy as they should be, LOL!

Great ideal, I have not heard of corn stock before and I’m with you that roasting them is imparting FLAVOR ! I Gotta make this and can some up. I’ll be canning mine in pint jars so I can add a jar in a lot of different recipes that I make to give that hint of corn flavor to them.Blessings

I am on my second batch. My first wasn’t roasted but still quite good. Today I made this according to the recipe. It is awesome! Never heard of this before either buts is going to be a pantry staple now. My husband loved the smell of it cooking on the stove and I couldn’t quite fit everything in the last jar so I drank what was left over. Yum! 😋

Hi Carol, I am so excited to make this stock for the 1st time and add it to my pantry! I do have one question about the processing time of 30 mins. for pints and 35 mins. for quarts. Why is the processing time for corn stock longer than the processing time for chicken or beef stock which is 20 mins. for pints and 25 mins. for quarts? Did I miss something in your video? Thanks in advance for your response!

I’m canning corn today, saving my cobbs (in the fridge) until I get the last of the corn out of the canner, so I can make some of that delicious corn broth. Is it okay to do it that way? I couldn’t leave them out until I’m done, or they may go bad. Can I still do it if I keep them refrigerated? Don’t want to lose it. 😊

@@carol-thriftychichousewife6231 I’m so happy… I made the corn stock… two batches, in fact. A total of 11 quarts! The house was smelling sooooo good! I tasted it, and it was much better than I even anticipated. The only thing I did different is, I didn’t roast mine; and instead of simmering stove-top, I cooked each batch in my electric roaster… about 4 1/2 hrs per batch. Thank you for sharing this, and mentioning it in your other recipe vids, or I would never have known about corn stock. 🥰

How do you use the cut off kernels? Could they be frozen? Would they still need to be blanched or would the roasting cover that?

I just use a sharp knife… yes I freeze them… no blanching necessary

It makes an awesome southwest, Tex Mex and Mexican soup base, chowder base, veggie soup base and chicken soup base. Also using it to can other foods would be awesome. The subtle roasted corn flavor just kicks recipes using broth up to another level of yumminess. Roasting the corn in the husk is key. And canning the fresh sweet corn is a bonus.

You may have answered this question in the video & I missed it, but can you save cobs from eatting them fresh & make the stock with the cobs? If so, can I freeze them until I have enough to make a batch?

Could you use the corn you cut off to make your canned corn that you do? Or since it was roasted you can’t and you can only freeze it?

christina felton you could can it. My video is for cream style corn but you could do whole kernel corn also. Just skip the blanching step 😊

My altitude is different at each site I look at. Between 127 and 145. How many pounds of pressure does that mean I have to use when canning. I am so anxious to start using mine and just don't want to use the wrong weight

Elizabeth Horne you can follow my instructions. 0-1000 ft is 10lbs of pressure for weighted gauge, 11lbs for dial. In other words you have no adjustments 😊. Happy canning my friend!

Linda Lewis I froze them to eat later. I used some in the corn chowder I made also 😊

Alicia McNamar you can use this stock in any recipe calling for stock or broth... chowders, soups, replace water with stock for cooking rice or pasta, risotto, grits, cornbread stuffing, etc. You get the idea, be creative 😉. Btw, I’ve never had corn cob jelly...think I should give that a try 😍. Enjoy 💕Carol

I wonder why this is canned at 35 minutes when meat stock is canned at 25 minutes for quarts?

The processing time for any vegetable stock is 30 minutes for pints and 35 for quarts. I’m sorry I don’t know the reason why, only that those are the guidelines 😊

@@carol-thriftychichousewife6231 Thanks for this video! I made it tonight and it's really good! Making your chowder with it on Tuesday. Mine only yielded 4 quarts, but I think mine boiled a little hard at first and too much evaporated. You are right, this is a new summer pantry staple! :)

Janet Murdock I’ve not tried it but I think it would be fine. I freeze other veggie scraps for stock so I don’t see why not 😊
