Carol a little trick, I stick the small end of corn in the hole of a bundt pan to cut the corn off. The corn is more stable while cutting and the kernels fall off into the pan.

I love this! I made my 1st batch last week, after buying a dozen ears of just picked corn :-). I did not roast it, maybe another time, but it's just too hot! I used a cup of it as the liquid in the Instant Pot, added 2 chicken breasts, trivet on top with chunks of potatoes and carrots, pressure cooked for 4 minutes. Pulled out the chicken and veggies, stirred in a little bit of diluted corn starch and made a gravy. It was delicious! Thanks for the inspiration!

Wow! Never heard of this stock before, would be wonderful to use in soups and chowder for added flavor. Love squeezing every ounce of goodness from the foods we would normally toss out. My favorite is all those turkey bones at Thanksgiving for stock.

Belinda I simmer the turkey bones in water for several hours adding vegetables like onion, carrots and celery. Then strain and pressure can.

Yum! Do you ever leave your onion skins on when you make stock/broth? I love the golden color they contribute. I’m thinking the onion could roast along with the corn for an additional layer of roasty goodness. =)

This has become a favorite broth for me. We are vegetarian and a,ways looking for ways to flavor broth for soups etc. I first saw this video three weeks ago and am absolutely hooked. My third batch is on the grill right now. I made a corn broth soup with cut up potatoes, green beans, onions, corn and orange peppers. Just what I had on hand. Added salt, pepper parsley and Italian seasoning and it was fabulous!!! Thanks so much for sharing this. It is wonderful and I had never heard of corn broth before. The added bonus is the corn is yummy and sweet too!

We grow a lot of corn most years; between five and seven hundred row-feet. Usually I just toss the cobs to the chickens. From now on the chickens will get slightly onion-flavored cobs that aren't as juicy as they should be, LOL!

I am on my second batch. My first wasn’t roasted but still quite good. Today I made this according to the recipe. It is awesome! Never heard of this before either buts is going to be a pantry staple now. My husband loved the smell of it cooking on the stove and I couldn’t quite fit everything in the last jar so I drank what was left over. Yum! 😋

Hi Carol, I am so excited to make this stock for the 1st time and add it to my pantry! I do have one question about the processing time of 30 mins. for pints and 35 mins. for quarts. Why is the processing time for corn stock longer than the processing time for chicken or beef stock which is 20 mins. for pints and 25 mins. for quarts? Did I miss something in your video? I’m canning corn today, saving my cobbs (in the fridge) until I get the last of the corn out of the canner, so I can make some of that delicious corn broth. Is it okay to do it that way? I couldn’t leave them out until I’m done, or they may go bad. Can I still do it if I keep them refrigerated? Don’t want to lose it. 😊

I tasted it, and it was much better than I even anticipated. The only thing I did different is, I didn’t roast mine; and instead of simmering stove-top, I cooked each batch in my electric roaster… about 4 1/2 hrs per batch. Thank you for sharing this, and mentioning it in your other recipe vids, or I would never have known about corn stock. 🥰

It makes an awesome southwest, Tex Mex and Mexican soup base, chowder base, veggie soup base and chicken soup base. Also using it to can other foods would be awesome. The subtle roasted corn flavor just kicks recipes using broth up to another level of yumminess. Roasting the corn in the husk is key. And canning the fresh sweet corn is a bonus.

My altitude is different at each site I look at. Between 127 and 145. How many pounds of pressure does that mean I have to use when canning. I am so anxious to start using mine and just don't want to use the wrong weight

Elizabeth Horne you can follow my instructions. 0-1000 ft is 10lbs of pressure for weighted gauge, 11lbs for dial. In other words you have no adjustments 😊. Happy canning my friend!

Alicia McNamar you can use this stock in any recipe calling for stock or broth... chowders, soups, replace water with stock for cooking rice or pasta, risotto, grits, cornbread stuffing, etc. You get the idea, be creative 😉. The processing time for any vegetable stock is 30 minutes for pints and 35 for quarts. I’m sorry I don’t know the reason why, only that those are the guidelines 😊
