Very interesting! Looking forward to the second section. So... I started watching your home network tour, and I didn't get as far as seeing if you put your cameras on a subnet, and firewall them. Do you have any concerns about the camera sending information going back to the manufacturer? Have you looked at their behaviour with Wireshark or an appropriate tool? (I'm just getting into networking, so apologies if this question doesn't make sense.)

It makes perfect sense. I actually had a separate "security" subnet for the cameras in the past. However, I've been lazy lately and they've been on my main "home" network since my last re-design. The "phone-home" feature has always bothered me in the back of my brain, but I haven't actually looked at a packet capture to confirm exactly what they are doing. My "home" network is pretty wide open, and is separate from my main server network so there is a layer of security there. TL;DR: The question makes sense and you are right to have a concern with "cloud" devices like these, but I find myself too lazy to really dig into it and protect myself like I probably should. To be safe, you could put the cameras on their own subnet, and firewall off any external connections. This way, the cameras can only talk with the NVR and will not have any way to "phone home".

Does the Wyze v3 RTSP firmware support substreams? My use case is to use a lower resolution substream for object detection using Frigate

I don't believe it does. I haven't seen any evidence of it in my use, and I can't find any mention of it online.
