I see what you're saying braj, but think this is slightly over-simplified. Maybe it's different in the US, but over here in the UK we have the choice of British malts, but also imports from Germany, Belgium, etc. Yes, it's all barley, but aside from the kilning/roasting, there are differences from the variety of barley, farming and processing methods, climate, etc. It's only small changes but there are differences. Something that is getting more interest over here is heritage varieties, basically growing heirloom plants that have slightly different flavour profiles. If you want to brew to a historic recipie, or just want to try something different in a malt forward beer, it's good fun.
