Tina, I am allergic to wheat and have eaten gluten-free for over 6 years now. What I discovered with gf baked goods is, after mixing the batter, like muffins, cakes, rolls, etc, let it sit for about 10 minutes, and then bake them. They will rise up a bit more and look more 'normal' to you. Have a smooth move!

From the bike country of Europe your sadle is too low it has to be on level with your hip bone so somewhat higher. That eases the pressure on your knees and offers you more speed and balance. :)

My mom used to make some quick rolls when she didnt have time to bake bread. They still tasted yeasty but since the recipe uses baking powder they rise independently of the yeast. When I went gluten free I swapped out the flour for oat flour (oats pulsed with a blender) in this recipe and it worked out fine and tasted great. They are a little denser than breads with gluten but very tasty. You can use a gluten free flour as well but I like just using oats. The original recipe: Quick Rolls 1 package dry yeast ½ cup sugar 2 cups water 1 ½ sticks butter 4 cups flour 4 tsp baking powder 2 tsp salt Soften yeast in 1 cup lukewarm water. Melt butter and cool. Add sugar, butter and the additional cup of water to the yeast mixture. Add flour. Spoon into the greased muffin tins. Bake at 350 degrees for 30 minutes. Makes 2 dozen
