Sarah, paprika is made from Marconi peppers. They look like the long tapered peppers laying on your table. Peppers made from Marconi peppers at home is said to make even better paprika than what you get from the grocery because it is much fresher. You may not be able to find them in a grocery store and may have to get the seeds from a specialty store.

baker creek has the seeds. to smoke i use hickory and smoke at 200 225 for 6 or 8 hours. i then dry them and grind when i need some. it smell great and makes the best rubs.

Celine Bridges I purchased my seeds from Baker Creek. I too smoke mine as Michael described. You can also pre-grind and place on a cookie sheet. Place the cookie sheet on the top level of your grill (in case you don't have a smoker) and leave for several hours at a low temperature. You can control the smokiness flavor by the amount of time left in grill.

Leutschauer Paprika Pepper, I got seeds from baker creek. This is a Hungary pepper for paprika so it has a kick to it. Great producer though. Paprika is usually a mix of good tasting peppers.

I've been doing research and I will be making my own paprika for the first time here in a couple weeks. I've learned that Hungarian wax is great as well as poblano. I just watched the greatest "Garden like a Viking" video where he shows us how to roast them and store them and grind them as needed. He also uses oak or Maple wood. He waits until the poblano is a deep dark mahogany color and the Hungarian wax is bright red. I'm like you. I like to use the smallest little jars when I make things so it looks like I've done so much more!😂 I also use my bullet, I have the same little green and white dicer that you have, and I finally got myself a freeze dryer! You and many others have been such an inspiration for me since 2019! TYSM

The pepper you use and call paprika pepper we call tomato pepper. And actually in Slovenian pepper is called paprika (did I confuse you? Because I think that I just confused myself haha). Don't know about any pepper that would be the same as the powdered stuff you buy. But I have to say, that I love your channel. I just found it and since I have a diploma from college in agriculture and live on a farm it's nice to see someone who loves farming and growing vegetables just like I do :).

Cute! In Slovenia the it's called tomato pepper. In Hungarian, "apple pepper" is the actual translation. (Is it sweet in taste like a red bell pepper?) I think my kids would like to eat those cute little things. I'm growing actual Paprika Peppers for the first time. I'm harvesting them today! I'll be seed saving them, too, since they are heirloom.

A good friend swears by the Leutschauer paprika pepper. We are going to try them out next season. I am going to include them in my next Baker Creek order and give them a try. I liked the description I read from Baker when I started researching them and I think that they will work out well for us. (From Baker Creek: "A lovely drying pepper that comes from Matrafured, Hungary. It has been grown there since the 1800s when it was brought from Leutschau (Slovakia). The medium-hot paprikas have great flavor, are terrific for drying, and make a delicious spicy powder. Very rare!") It's worth a shot. (-:

Just curious and am enjoying the comments. I have a friend who is from Hungry and the ones they grow in bulk to dry are not hot at all. Some large manufacturers add hot peppers to add into the sweet ones to sell. Plus they also told me that Paprika was brought from Turkey and not at all originally from Hungry but as with the spice trade of generations ago, that's the case with everything I guess.

tomato peppers are whats used for hungarian paprika powder, which is in my opinion by far the best paprika powder. Great for smoking too. (there is a sweet and a bit spicy variety)

I like jelly jars for my spices, either harvested from home or purchased at the Amish store. I put a recycled parmesean cheese lid on them (it has a shaker side and a spoon side). You could do that on just the jar you are using. I have them in a drawer next to my stove so I label the tops instead of the sides. I don't know how you would smoke paprika but, like other commenters, that is one of my favorite seasonings.

I love this! I have never made my own seasonings but will have to plan to do so next spring season. This year my peppers were a big flop though I only grew bell peppers. Thank you for sharing all of your knowledge and experiences with us. I’ll remember that when working with the spicy peppers my toddler will need to be kept entertained elsewhere for safety.

This was a great video! Funny story.. years ago hubs grew some habaneros and we dried them. Well, one night he decided to grind them in a little coffee grinder. 🤦♀️ He did it in our first floor mini kitchen. The rest of us were up on the main floor. Well, suddenly, we hear my hubs coughing, then he comes upstairs with his eyes all red and he looks like he was stung in the face! We all rush to the top of the stairs to see what’s wrong and we were hit with the cloud of habanero powder... I will never let him live that one down! 😂

I grew habaneros in a pot one year. Dry productive. My teenage son and his buddies decided to eat one raw. They were guzzling milk eating bread and rolling on the floor crying like babies. I warned them but they were he men and could take the heat. My daughter and husband and I got a good show and laugh out of it . One mom called me to complain about her sons eyes burning and his poor little lips. Please !! I warned them about the peppers and has to clean up the milk and bread mushy mess they made flailing around in my kitchen floor and bathroom floor. By the way they hurt coming out too. I told her to come over and help herself to some Drive By Peppers as my husband named them. Drive by your house holding one our the window and they spice up your face food and eyes nicely.

In my research for a paprika pepper. I came across the Aji Rico pepper.. in Hungry paprika is a main stay spice they use, and this pepper is recommended. Either smoked or not. Found some seed and will give it a go next spring.

The paprika that tastes the best to me has been smoked. You can dehydrate jalapeno also, it's good for those that like there chilli a little warmer than everyone else in the house. Your red pepper powders, they should be kept in a dark place. The uv light will bleach that great red color... Nice video!

For my cayenne peppers last year I threaded them onto some thread and hung them up in my kitchen to dry. I have a big dehydrator, but stringing them up saved me some electricity and they added a nice decorated touch to my kitchen.

Do you ever string dry the peppers? My great aunt in georgia (lots of humidity) used to lay them out in the sun all day them she would use a needle and waxed thread and string them loose. She would them string them horizontally in the sun each day until she felt they were dry enough, then tug them together for the traditional vertical pepper strands. Sometimes she smoked them as well. They were beautiful hanging in the kitchen!

I have one single Thunderbolt sweet pepper plant on my apartment balcony. We got 5 big, sweet, red to peppers off it earlier but the weather is becoming cold and I have an aphid problem. So, timing dictated that I just pull the 5 new green peppers. Got them washed, sliced, de-seeded, and in the dehydrator now. Tossed them in a bit of liquid smoke. Hoping they make a tiny batch of "smoked" paprika for topping some eggs. :) Thx for the walkthrough! Subbed.

My winter project is working on pepper powders and my own Smoked Paprika. I started these peppers: Habanada, Jimmy Nardello, Criolla De Cocina, Melrose, Leutschauer Paprika Pepper, Waltz, Sweet Banana, Jalepeno, Cayenne, and a Thai Hot Ornamental. Yes, I am growing them all. Wish me luck.

Seed Savers Exchange org threw in a free pack of Feher Ozon Paprika pepper in my order last spring. I never even knew paprika came from peppers, so I was intrigued! Had to plant them and found to be a very hearty and prolific plant. Most are still ripening from that beautiful creamy white to yellow to red but I've sampled one so far- delicious flavor, thick walled, plump and juicy- cannot wait to dry more to find out their flavor! Hope that helps!

I just use mild chili peppers. Find some to suit your taste, recommendation. Be sure to remove the seeds!! That's where the heat is!

Alma peppers are my favorite for freeze dried and powdered replacement for paprika. There are also Romanian and Hungarian paprika peppers...one orange, one yellow. I like the yellow one...it has a little more 'kick' than the Alma. I make a chicken paprika, onion, celery, saute, brown chicken, add salt and pepper, then paprika, chicken broth...cook until tender. Turn heat off...add sour cream for a really wonderful dish. Serve with noodles or rice.

You can try boiling the vinegar solution with the jalapenos in it before putting the eggs in. That might make the pickling solution spicier. Cool it though before putting the jar in the fridge.

Wow..its looks alike chilies i found in my country Indonesia. If its right..its must be spicy..we called as cabe rawit =tabasci and cabe besar for chili papper. We mostly mx both of them with tomatoes for sambal..where Indonesian need sambal for every dishes

Hi Sarah.. All the way from Cape Town South Africa here.. Just wanted to know.. When making your powder for spices why do You remove the seeds of the chilies.. Why don't you leave the seeds in. The seeds carry most of the heat where as the flesh carry most of the flavor.... I add chilies in 99% of my recipes as I'm Muslim Indian.. On a side note. I've been watching your videos daily for over 2 months and I finally hit the subscribe button today. I love watching your family and I learn a ton from each video that your post.

She did mention in the video that the seeds can be a bit bitter. Also, they don't grind well. They are not usually included when grinding into powder even if you do want spicy powder.

Maybe if you have to much powder you could get some small plastic bags and put some pepper powder or dried peppers in them and sell them at your farmers market. I don't know the price of spices in America but here in England a very small jar can cost £3.00

Julie Hale cayenne peppers in Florida USA go for about $5 a hand full dried, and $2.79 a pound fresh. And this is at the local Spanish markets and flea markets, I have no idea why it’s called flea market, just in case your wondering.🤷🏻♀️

LOL! I did the same thing with an abundance of peppers last year & I can relate to EVERY single word you said. Not wearing gloves=MISTAKE! Breathing in that powder!=OUCH! Only getting half a jar of powder=DEFLATED! LOL....But yes, it's sooo worth it! I want to do Paprika also so I'll be following your journey to see how it's done. GOD created man and everything the man need as well. What a wonderful GOD we have. Hebrew language Jesus name YESHUA means Salvation. So everywhere in old testament where you see salvation it's JESUS name.

Interesting idea about the paprika peppers. You mentioned that the kind you got is normally used for stuffing, but you're dehydrating them for powdering, but I'm wondering: you think you could just use and cook them like you would bell peppers, diced or sliced for tacos and whatnot, just with the flavoring being like paprika? :)

A mix between chili peppers and red bell peppers, depending on how hot you want it. And yes smoked paprika is better, smoke both types of peppers. On the dehydrating side of things, (for me), I have a mandolin and just slice everything into rings, easy, space saving, and manageable. Love the bullet, we have one of the “Walmart” brand ones, and love it. If you like chili in Adobe sauce you could use some of those dried jalapeños to make and store in the 4 or 6oz jars.
