As you collect and use acorn anyway, you should make some acorn coffee. It’s deeeelishious! It’s definitely labour of love, but you two don’t seem to shy away from such projects. You made ketchup after all! I make my acorn coffee how my Lithuanian grandmother used to make it. After peeling the acorns, she used to cook whole pieces in full fat milk (she used to have her own cow). That’s how she leached the tannins. I also tried water leaching, but they stayed rather bitter for my taste. Then she would drain and air dry the acorns (not until they’re fully hard, just until the milk dried off), and put them through a meat grinder (I use food processor as it’s what I have). Finally she’s roast it in thin layers in the owen until dark brown, but not burn. To make the coffee, you cook about a heaping table spoon per cup in some water and milk. I also add some honey when I feel decadent. It’s got such beautiful nutty, comforting flavour. I think I’m going to go make myself a cup right now.

Yaupon is a wild shrub that grows across the US. It’s a tea not a coffee but it has caffeine and when roasted I thinks it’s closer to coffee than tea.

Yup! Southern PA is at the top of their range. They're generally pretty rare though and we mostly get ours from a tree near Silvan's parent's house in North Carolina. We also have a couple that we planted in our yard, but they haven't produced fruit yet.

You can make coffee from date seeds as well. To me, it doesn't smell like coffee until after you have roasted & grinded them. When you smell it then, its mind boggling how much it smell like roasted coffee. Kinda tastes like coffee. I think the stronger concentration it is, the more it taste like it.

Yaupon is not hard to grow in colder climates if you use green houses, cold frames, or bring inside for the coldest part of the year. I'm not sure your coffee grinder would enjoy the abuse of those KCT beans. I've heard KCT is basically nasty no matter what. No chicory????????
