10 red chilis scoop insides 4 cloves of garlic Jar of peeled pepper- use 3 Blend Medium heat pan 500g peptin sugar (thickening jam sugar) 500ml of white wine or cider vinegar Stir and bring to the boil Add two scotch bonnets (poke a hole in each and let simmer in dish for flavour) Season with Salt & pepper Then simmer off low heat 20-25min until thickened (will reduce by about half, go darker in colour) Makes four jars Keeps for 3-6 months

A little sweetness is good for chilis, in my experience. Wouldn't make a jam out of it though. Gonna really ruin that nice Habanero flavour. You might be able to use blended peas instead of sugar to bind the water, so the pectin as gelling agent could still work.

Also the fact that it solidify at room temperature means it fails at being a dipping sauce. So it's too sweet to be used in a spicy dish, and it's too solid to be used as a sweet chili sauce. The worst of both worlds.
